👩‍🍳“KALUNAY or KULITIS” On the nutritional value of indigenous vegetables, the study shows that these contain varying amounts of protein, fibre, carbohydrates, vitamins and minerals. Do you know that? Kalunay is usually used, or cook as a veggie along with other vegetables on a Philippine Ilokano recipe called denengdeng where vegetables are mixed together. And here is my version of Vietnamese Pho similar to french spicy Pot-au-feu Flavor Noodle Soup. Kalunay or Kulitis (Spleen Amaranth), I got it for free and from that harvest 2 times cooking

250g Mung Beans or Monggo, boiled

200g Pork Belly

1 Eggplant

Garlic

Red Onion

1 inch Ginger

1tsp. Turmeric Powder

2tbsps. Shrimps Paste

Chili or Chili Flakes

some Water to cook

some Salt to adjust the taste

500g Beef Bones

1 bunch of Chinese Cabage

2 Carrots

1 whole head Broccoli

200g Rice Noodles

1 Red Inon

2 inch Ginger

1 Cinnamon Stick

some Parsley Stem

some Coriander or Wansoy

1 Pouch of Vietnamese Spice Paste for Pho Noodle Soup, spicy

some Water to cook

Chili Sauce

3tbsps. Fish Sauce or Patis in Tagalog

some Scallions and Chive
