Pure vegetables for pure health

„Eating as medicine“. An Italian study shows that valuable ingredients such as carotenoid, polyphenols and vitamin C are not necessarily lost when heated or cooked. Vegetables should be treated as gently as possible, processed fresh and only cooked „al dente“ or firm to the bite. Eating vegetables and fruits are good as we all know. I agree we have a kind of satiety sensor in our stomach. If it is empty, a hunger hormone called ghrelin is released, triggering the „foraging“ impulse in the brain. Only when the stomach is filled to a certain extent does the impulse decrease again. If you mainly eat foods with a high energy density, there is a risk of consuming more calories than are consumed with all known negative consequences. In my case because of fatty liver and type 2 diabetes, consumption of more vegetables and fruits on the other hand has a crowding out effect on high calorie dishes and in this way indirectly protects against obesity and better for me.

Growing your own bean sprouts at home at its simplest! Sprouting Ming beans can take anywhere, depending how big you want them. Here she tried the smallest mung bean she’s unhappy with the result because the sprouts are too short and small. But anyway I cooked it with potatoes 🥔 and carrots 🥕 plus celery stem and we finished it. At least it taste good😋

YOU NEED…….

250g Mung bean for bean sprouts

some Vegetable Oil

about two sliced Pork shoulder

1 Onion 🧅

3 cloves Garlic 🧄

1 big Carrot 🥕

2 Celery stem

3 Potatoes 🥔

200ml Vegetable broth seasoned with salt

I like wide bean very much. Preferably in a sweet and sour sauce or with bacon even as side dish for lamb meat. This hearty vegetable recipe is traditional and good. The wide green beans cooked with potatoes as simple as that served with my tofu-fried brown rice. Hope you‘ll like it as much as I do.😋

YOU NEED…….

250g Wide beans

4pcs Potatoes 🥔

1 Onion 🧅

2 cloves Garlic 🧄

2tbsp Linseed oil

150 ml Vegetable broth seasoned with salt

2tbsp chopped Dill, fresh or frozen

2 cups cooked cold brown rice or cooked a day before (leftovers)

2pcs Tofu

1tbs Oyster 🦪 sauce

1tbsp Soy sauce

3tbsps Rapeseed oil, for frying Tofu and fried rice

2pcs Scallions

2 cloves Garlic 🧄 for fried rice

„Dinengdeng“ is an Ilocano dish in the Philippines 🇵🇭 similar to „Pinakbet“. It is also classified as a „Bagoong Monamon“ soup base unlike „Pinakbet“. I am half Ilocano, haft Visayan so I should know this.🤪 Here what I have at home fewer vegetables no squash or pumpkin. Topped with fried small mackerel. Was the last mackerel I got from India shop a day before lockdown in Vienna.

Because we are Filipino served with white plain rice.🍚 For me with my brown rice.

YOU NEED…….

A bunch of String beans ( Sitaw)

a bunch of Horseradish fruit- Moringa fruit ( Bunga ng Malunggay)

3pcs small Eggplant 🍆

2tbsp Any Vegetable Oil

1pc Onion 🧅

1pc Tomato 🍅

4 to 5tbsps Anchovy Sauce to taste ( preferably Bagoong Balayan)

Romaine lettuce is the usual use in salad like Caesar salad but like other lettuces may also be cooked. It can be braised or made into soup. Here added to pork belly and shrimp in sour soup.

Cooking Brussels sprouts in a different way! This warming soup surprises with its different flavors and convinces one or the other cabbage refuser. Try it folks!

Served with bread or whole grain toast. It has been said that one of best food for our health is GINGER. It let digestive juices flow. Ginger also warms and relieves bloating. So it is good to have it during winter time too.

🇵🇭“LASWA“-MY VERSION

Oh my nanay (mother) she cooks so good.😇 The reason why I love vegetables, I grew up with vegetable.😅 Now I live in europe, I cook this for at least twice a week. And today another version and tomorrow also another version of mine.🤣

My „LASWA“ with Crabs 🦀

What is „LASWA“? An Ilonggo native dish. My late mother is from NABAS, AKLAN a native Visaya or Bisaya. I learned this dish from her. When I was in elementary school she used to cook this three times in a week. But using variety of vegetable which she could get from her urban gardening in Mandaluyong City where we live by that time.

Here with dried tiny shrimp 🦐 (Alamang), squash (kalabasa), wide green beans and more okra which is good for diabetic. Here I added another type of bitter gourd (Ampalaya). And the tomatoes 🍅 kind of cherry tomato small ones. What I have in my refrigerator.🤣

Today’s soup freshly cooked by me. Butternut squash is in season now. Adding all vegetable to chicken broth with chicken flakes plus homemade egg noodle given to me by colleagues completes the recipe.

Feeling like sorry 😐 for myself since July 25, 2019. The day I tried to be strong but it doesn’t work for me.🥺 I thought I am, until now I’m still fighting. I should always remind myself:

Slowly but surely my blog helps me out with my struggles. It makes me happy. 😌 Every time I want to post or write something here it eases me.

Today I want to share my August- instant- telegram that partly helped me out with my worries about my job.

Today— Thank you so much ate Nitz, for a very healthy lunch 🍴 from her urban gardening direct to her kitchen 👍 “ampalaya” or bitter melon which is good for diabetic like me.😘 (bitter melon and shrimp 🍤 in coconut 🥥 milk plus mung bean with bitter melon leaves) Joan (her daughter) cooked “adobo”. Yum😋

Last Friday, our Friyay brekky (with daughter) toast with avocado 🥑 boiled egg 🥚 arugula and cherry 🍒 tomatoes 🍅 yummy 🤤

Salmon head “sinigang” (sour soup) 🥣 for Hubby’s dinner 🍽 I cooked 👩‍🍳 With lots of water spinach (kangkong).

We watched the movie 🍿 🎥 “Hello Love Goodbye” relate much with the story occurring in reality drawn from actual situations mostly for Filipinos OFW.

Yummy 😋 foodies at Vienna Film 🎥 Festival 2019 infront of City Hall. The popular summer event the 29th Film Festival, dedicated to the 150th anniversary of the Vienna State Opera.

Now slow down a bit after a long day outside. But she’s happy to that. 🐶My doggie Mary😍

Again, green leafy jute leaves (saluyot), squash, okra, ampalaya (bitter melon), with tiny shrimp 🍤 seasoned with just salt 🧂 for my linner, watching 🔎 my sugar level today. No❗️to rice🍚

The best bulgogi in town. 👍 Real quick though bell Peppers are crunchy the way I like it. Yum 😋 But rice 🍚 is not mine.🙈😔 Thank you Jesus 🙏 hopefully will get through if not hubby will eat it all.🥺
