Feeling like sorry ๐Ÿ˜ for myself since July 25, 2019. The day I tried to be strong but it doesn’t work for me.๐Ÿฅบ I thought I am, until now I’m still fighting. I should always remind myself:

Slowly but surely my blog helps me out with my struggles. It makes me happy. ๐Ÿ˜Œ Every time I want to post or write something here it eases me.

Today I want to share my August- instant- telegram that partly helped me out with my worries about my job.

Today— Thank you so much ate Nitz, for a very healthy lunch ๐Ÿด from her urban gardening direct to her kitchen ๐Ÿ‘ “ampalaya” or bitter melon which is good for diabetic like me.๐Ÿ˜˜ (bitter melon and shrimp ๐Ÿค in coconut ๐Ÿฅฅ milk plus mung bean with bitter melon leaves) Joan (her daughter) cooked “adobo”. Yum๐Ÿ˜‹

Last Friday, our Friyay brekky (with daughter) toast with avocado ๐Ÿฅ‘ boiled egg ๐Ÿฅš arugula and cherry ๐Ÿ’ tomatoes ๐Ÿ… yummy ๐Ÿคค

Salmon head “sinigang” (sour soup) ๐Ÿฅฃ for Hubby’s dinner ๐Ÿฝ I cooked ๐Ÿ‘ฉโ€๐Ÿณ With lots of water spinach (kangkong).

We watched the movie ๐Ÿฟ ๐ŸŽฅ “Hello Love Goodbye” relate much with the story occurring in reality drawn from actual situations mostly for Filipinos OFW.

Yummy ๐Ÿ˜‹ foodies at Vienna Film ๐ŸŽฅ Festival 2019 infront of City Hall. The popular summer event the 29th Film Festival, dedicated to the 150th anniversary of the Vienna State Opera.

Now slow down a bit after a long day outside. But she’s happy to that. ๐ŸถMy doggie Mary๐Ÿ˜

Again, green leafy jute leaves (saluyot), squash, okra, ampalaya (bitter melon), with tiny shrimp ๐Ÿค seasoned with just salt ๐Ÿง‚ for my linner, watching ๐Ÿ”Ž my sugar level today. Noโ—๏ธto rice๐Ÿš

In addition, another aspect is significant, the new diversity seems to combat typical disease patterns in the industrialized countries such as heart attack, stroke, diabetes and cancer.  We are encouraged to adaptour diet to the modern lifestyle. Daily exercise is important. Healthy eating is important too, the right choices of food and the correct way of prepping it.

My eggplant ๐Ÿ† assortment from farmers market. Eggplant is low in calories & carbohydrates but high-fiber and non-starchy vegetables. As type 2 diabetes patient, management requires eating a healthy diet rich in non-starchy veggies. Studies have shown that a diet rich in potassium, can help to prevent stroke and high blood pressure. That is eggplant ๐Ÿ† a good ๐Ÿ˜Š source of potassium.

Also help younger looking skin, and most so all in scientific tests, pumpkin ๐ŸŽƒ has been shown to reduce blood glucose levels. Mung bean sprouts are germinated by leaving them watered with 4 hours of daytime light and spending the rest of the day in the dark. Mung bean sprouts can be grown under artificial light for 4 hours over the period of a week.
A very simple recipe after a week of meat!

Here is another version of mine more richer in Tofu and togue. Same procedure of course!

* 2 tbsps cooking oil
* 2 pcs tokwa (hard bean curd)
* 2 tbsps garlic, crushed
* 1 pc onion, sliced
* 2 pcs tomatoes, sliced
* 9 cups togue (mung bean sprout) washed and drained
* 2 tbsps Oyster Sauce
*  some ground black pepper
*  some salt
* 2 tsps patis (fish sauce)

Dorado or Sea Bream, icooked with tomatoes, onion and tumeric a kind of with soup but it turned out good for hubby’s taste. Ate with my brown rice. Cooked without oil just the natural fat from the fish.

TUMERIC- comes from ginger root, this spice could help treat diabetes, stabilize blood sugar levels according to research.

Sea bream belongs to white fish, which is a good source of iron and calcium and has a higher fat content  as you could sea in soup, considered a valuable source of omega 3 fat. Can help to lower blood pressure, again for hypertension.

Corn Soup with Turkey Breast and Pechay – iCookiTravel

A soup made of Polenta, Pechay and Turkey breast seasoned with broth powder, salt and pepper. Polenta made from maize flour or corn flour, use in Italian cooking. That was dinner last night and granary roll. Granary roll or in german Grahamweckerl is lower on the glycemic index than white and wholemeal bread. So it is suitable for people who are suffering  from type2 diabetes.

Salad and Turkey Breast – iCookiTravel

A lightly lunch for me as I go on watching my cholesterol, diabetes, and hypertension. Yes you read it right. Here above juicy turkey breast meat and salad without rice. Home cooked in a frying pan and salad dressing is just a mixture of olive oil, vinegar, salt and pepper. For all we know that turkey meat is an excellent choice for health.

HARVESTING TIME

Yes! It’s harvesting time late upload and late update but still…
All about my Potatoe goodness, is the worldโ€™s fourth largest food crop, following rice, wheat, and mais (corn).
Eventually, agriculturalists in Europe found potatoes easier to grow and cultivate than other staple crops. It became known that potatoes contained most of the vitamins needed for sustenance.

My fresh harvest potatoes! Too late this year but anyway, harvesting potaoes is like digging for treasure and finding it. Potatoes is fat-free, cholesterol-free, high in Vitamin C, high in potassium &a good source of VitaminB6 &dietary fiber. Sounds good for diabetic like me.

OKRA

Okra or lady finger, in my country-Philippines okra can be found among traditional dishes like pinakbet, dinengdeng (Ilocano food), and in sinigang as well. I love Okra, specially if served steamed or boiled in a salad with tomatoes, onion and seasoned with anchovy sauce (Bagoong).

Picture above 2 kilogram Okra which was brought to me by one of my colleague (at work). The austrian people are not use to this vegetable keep on asking me how to cook it or how do I eat it or even how does it taste!

So what I did everyday I start cooking in different ways or species and brought at work as my “pambaon” (lunch box). Okra is rich with Vitamin K and fiber both good for diabetes. It supports colon health, Vitamin C helps keep the skin looking young and vibrant as what the study said. Maybe this is one reason why I look younger as my real ageย  ๐Ÿ˜‰

Here I called it “Okra Pinaksiw” cooked with onion, garlic, vinegar and anchovy sauce (bagoong).ย  Served with rice and shrimps that was lunch the other day.ย  Vinegar as condiments we can find in different ways of cooking in our food. Previously, the main task is to make or give sour taste or in a few cases should bring an improvement or use as preservative.

Above here is just sauteed okra with squash, onions and seasoned with anchovy sauce again!ย  I usually don’t eat rice at night or for dinner. That’s why I prefer to have some vegetables instead. Then my cup of tea. That’s dinner for me and not late than six o’ clock in the evening. I have to consider the carbohydrates and choosing the rightย  fruits and vegetables is easy to maintain the blood sugar. Two years ago I started to change my lifestyle, to be able to prevent or delay the onset of complications. Since I’m type 2 diabetic. The next update here more about vegetables and fruits I use to have for my dinner. Guten Appetit everyone (Y)

SOYA CHUNKS-FILLED SPRING ROLLS

This spring rolls are made not the traditional one which is with ground meat but with ground/chopped Soya Chunks. As a substitute to meat and for those who are fun of vegan or veggies even strict vegetarian this recipe is for you ๐Ÿ˜‰

Soya Chunks is good source of protein. Soya chunks made from soybean are soft. Soybean reduces diabetes good for diabetice like me ๐Ÿ˜‰ย ย  Helpful against type-2 diabetes. They said, it aids in increasing the metabolism and production of insulin in the liver. Thus, addition of this in the diet can be really helpful for diabetic patients just like me.

There are different preparation of soya chunks specially in Indian Cooking. But this one was just my experiment as a substitute to ground meat. Itz turned oiut good and my two kids love it specially my daughter. Mostly I found the recipe with curryor coconut milk, maybe next time I will give a try…what do you think you Indian Berks?!ย  ๐Ÿ˜€

* 2 cups of Soya Chunks

* 1 pc. Onion, peeled and chopped

* 1pc Carrot, big, peeled and chopped

*ย  2tbsps. Olive Oil

* 2 pcs. Eggs

* Lumpia Wrapper

* 1 pc. Broth Cube

* Salt and Pepper to taste

* Some Vegetable Oil for frying

HOW TOO…….

+++ย  Boil the dried Soya Chunks before using further, you just need to boil it for few minutes in sufficient amount of water until they become soft and fluffy. Then drained and chopped. Carrot and onion peeled and chopped. With 2 tblespoon olive oil saute onion and carrot until carrot is cooked, mix all together in a bowl: soya chunks, carrot, onion, two eggs, salt, pepper and one broth cube chicken or pork according to your preference. I used chicken broth cube. Then wrapped and fry. Served with dip sauce like vinegar with pepper powder and chopped garlic. Guten Appetitย  ๐Ÿ˜‰
