Here I added purple yam powder, boiled tapioca pearl, and Nata de coco. Happy prepping everyone. This what COVID-19 brought us. At home I’m always trying recipes around the the world not only our very own cuisine.
A traditional sweet usually prepare and eaten during Christmas season particularly in the Philippines. Since I’m in Europe I have to find a way how to cook this with twist according to my family preference. So here is my „Ube Biko“ or Purple Yam and Glutinous Rice Cake topped with „Latik“ or Coconut Caramel and Pistachios with Italian cheese. Saturday breaky which is not intended for diabetic but I cheated because I can’t resist. Pan cake with rapsberry-mascarpone. Almusal ng Diabetic pero lutong bahay. Yum!
Cereal, oats and apples with cinnamon instead of sugar. Good for diabetic. Soak overnight in soy milk low in fat but high in protein than the normal milk. healthy isn’t it? Top with apple cubes, soy milk I used is unsweetend to make my overnight oats more nutrient. What about yours, how do you prefer?
Fruit Salad in sour cream for family dessert (Panghimagas). Hubby’s all time favorite since we got married.
Stuffed Nutella Pan Cakes yummy! Easy and mess free but not for diabetic. Try it at home. For another variation you can also add fruits just like slice bananas, strawberry or even blueberry. Nutella makes everything better even breaky. The best trick for getting the sweet stuff inside pancake and every delicious bite.
Saturday sweet, cherry-peach cake from my kitchen. I got a bunch of puff pastry from Serbia, a colleague brought it for me. And this recipe is also from her. I tried it for so many times, by this time I will bake it with cherry and peach. Which is divided into two mixture. You can try it also with banana or any fruit according to your preferences.
1 Pack Puff Pastry
For the First Mixture
1 Pack Baking Powder
1 Pack Vanilla Sugar
400g Yoghurt (3 Cups)
1 dcl. Oil
For Second Mixture
* 500g Cherry (no seed, in Glass or Can)
* 500g Peach (fron Can, sliced)
3 tbsp. Biscuit (any Biscuit, ground)
1 Pack Vanilla Sugar
In a bowl, add the first mixture all together and in another bowl the second mixture.
Cut Puff pastry lengthwise about half an inch and put it apart. Wet with the half of the first mixture and place in baking pan. Add the second mixture of fruits without liquid.
Then the other half mixture of liquid (First mixture).
Bake it for about half an hour 180° Guten Appetit!

Rich in vitamin C more than oranges. Strawberries is one among the favorite fruits of the Austrians. Either for baking, fruit salad or for refining many desserts are ideally suited.
Strawberries are probably the most popular addition to melon fruits of summer. The Latin name of the strawberry is “Fragum” which derived as much as “fragrance” means is a wonderful indication of what they offer a healthy fruits, an incomparable fragrance, which is also the best quality criterion that strawberries were purchased seasonal fair and offer full of tastes. I love my strawberries just wash and ready to eat. While my family they added sour cream a a bit of sugar to taste.
