👩‍🍳What is this? Is a Thai dessert, small balls made out of glutinous rice cooked in coconut 🥥 milk with sugar. Others may add purple yam. Here I added purple yam powder, boiled tapioca pearl, and Nata de coco. Happy prepping everyone. This what COVID-19 brought us. At home I’m always trying recipes around the the world not only our very own cuisine.

YOU NEED…….

1 Cup of glutinous rice flour

400ml Coconut 🥥 milk

3tbsps Purple Yam powder

1tsp Salt🧂

1 Cup Sugar or less ( I used Erythritol, sugar alternative)

1 Glass of Nata de Coco

Some Water for pre-cooking rice balls

🇵🇭PURPLE YAM and GLUTINOUS RICE CAKE (UBE BIKO)

A traditional sweet usually prepare and eaten during Christmas season particularly in the Philippines. Since I’m in Europe I have to find a way how to cook this with twist according to my family preference. So here is my „Ube Biko“ or Purple Yam and Glutinous Rice Cake topped with „Latik“ or Coconut Caramel and Pistachios with Italian cheese. And because I am diabetic I added Erythritol an organic sweet instead of sugar. Have a try guys, surely you will love this version of mine. Happy prepping and guten Appetit!

My Ube Biko

YOU NEED…….

1liter Coconut Milk

800g Glutinous Rice

10g Pistachios

400ml Coconut Milk for „Latik“ or Coconut Caramel

200g Erythritol

10ml Ube flavor

80g Italian cheese

some Banana leaves

Purple Yam powder

I remember the last time I was in Barcelona I ordered this in that restaurant where we had our linner as dessert after my ramen 🍜 was heavenly good!😋 Now this is my version made with love direct from my kitchen.👩‍🍳

4pcs. Banana 🍌 cut into 8 PCs.

Some Vegetable Oil for frying

Nutella

Egg roll wrapper or „lumpia“ wrapper

Cereal, oats and apples with cinnamon instead of sugar. Good for diabetic. Soak overnight in soy milk low in fat but high in protein than the normal milk. healthy isn’t it? Top with apple cubes, soy milk I used is unsweetend to make my overnight oats more nutrient. What about yours, how do you prefer?

Stuffed Nutella Pan Cakes yummy! Easy and mess free but not for diabetic. Try it at home. For another variation you can also add fruits just like slice bananas, strawberry or even blueberry. Nutella makes everything better even breaky. The best trick for getting the sweet stuff inside pancake and every delicious bite.

  • 1 cup Semolina flour
  • 1 cup Pineapple cut into cubes
  • 1/2 cup unsalted Butter
  • 1/2 cup Sugar
  • 3 Eggs, lightly beaten
  • 2 teaspoon Baking Powder
  • 2 cups of Pineapple juice
  • some melted Butter for baking pan

🇪🇺CHERRY-PEACH CAKE

Saturday sweet, cherry-peach cake from my kitchen. I got a bunch of puff pastry from Serbia, a colleague brought it for me. And this recipe is also from her. I tried it for so many times, by this time I will bake it with cherry and peach. Which is divided into two mixture. You can try it also with banana or any fruit according to your preferences.

My CHERRY-PEACH Cake – iCookitravel

YOU NEED…

  • 1 Pack Puff Pastry

For the First Mixture

  • 3 Eggs
  • 1 Pack Baking Powder
  • 1 Pack Vanilla Sugar
  • 100g Sugar
  • 400g Yoghurt (3 Cups)
  • 1 dcl. Oil

For Second Mixture

*  500g Cherry (no seed, in Glass or Can)

* 500g Peach (fron Can, sliced)

  • 3 tbsp. Biscuit (any Biscuit, ground)
  • 1 Pack Vanilla Sugar
  • 100g Sugar

HOW TO…….

In a bowl, add the first mixture all together and in another bowl the second mixture.

Cut Puff pastry lengthwise about half an inch and put it apart. Wet with the half of  the first mixture and place in baking pan. Add the second mixture of fruits without liquid.

Then the other half mixture of liquid (First mixture).

Bake it for about half an hour 180° Guten Appetit!
