👩‍🍳Are you ready for NO MEAT?

Tofu is very versatile, rich in protein, and an excellent meat substitute. Tofu is common in vegan cuisine and it has been in Asian cuisine for generations used. Check this soup recipe out of pure plant-based with smoked tofu. And my homemade vegetable dumpling is also out of smoked Tofu. Next time I will share with you the recipe for these dumplings. Plant-based soups that incorporate flavorful ingredients like smoked tofu, vegetable dumpling, cinnamon sticks, scallions, red and white onion, carrot, Inoki mushrooms, champignon, and zucchini. seasoned with mushrooms sauce and salt. YOU NEED…….

6 pieces of Vegetable Dumpling

2 pieces Scallions

1 piece Zucchini

1 piece Carrot

1 piece Red Onion, small

1 piece White Onion, small

150g Champignon

Ginger

some Water, about a Liter or more

1 piece Cinnamon Stick

some Olive Oil or any Vegetable Oil

Inoki Mushroom

Thai Basil Leaves, a handful

1 cake of Smoked Tofu

3tbsps. Mushroom Sauce

some Salt to adjust the taste if needed

250g Ramen Noodle or any Noodle of your preferences

some Chili Flakes, optional

👩🏼‍🍳Soup is a food that is made by combining ingredients, such as meat and vegetables in stock or hot boiling water until the flavor is extracted, forming a broth. Here is another recipe creation directly from my kitchen. With two options one is with tofu and plain shrimp with wide Chinese noodles. Of course, I prefer tofu to shrimp. Served with meat patties and for me mashed potato for hubby fried rice. That makes our sumptuous dinner for two. Happy prepping and Guten Appetit!

YOU NEED…….

RECIPE YIELDS FOR TWO TO FOUR PERSONS:

half a head of Broccoli

Scallions

2 small Carrot

2 cakes of Tofu

350g Tagliatelle

250g Shrimps

Pounded Ginger

some Olive Oil for frying Tofu

2 Liters Water

3tbsps. Mushrooms sauce

2tbsps. Soy Sauce

Drizzle Sesame Seeds Oil

some Salt and Pepper to adjust the taste if needed

🌏SIMPLE MEAL PREPPING – UDON – CHICKEN BREAST SOUP

👩‍🍳Of course, every correct menu also includes a soup. You are spoiled for choice when it comes to soup recipes – the selection is simply huge. And the best thing about it – many soup recipes are relatively easy to prepare with little effort. This is my version of udon chicken soup with broccoli, cauliflower and pechay. The most important thing in the preparation is the broth. Here I used Vegetable broth.

Udon-Chicken Soup

The rest were simple prepping my boiled banana in the rice cooker for snack or merienda. Hubby’s crispy knuckle of pork which he enjoyed eating with his own choice of dip namely; Toyomansi, (Soy sauce and Calamansi Juice) ginger and onion.

YOU NEED…….

250g Udon Noodles

some Olive Oil

5 cloves Garlic

Thumb-sized Ginger

1/4 head Cauliflower

1/4 head Broccoli

Pechay

1 Liter Vegetable Broth or more if you need

1 Whole Chicken breast

🇨🇳TOMATO-EGG-UDON SOUP WITH CHICKEN BREAST

👩‍🍳Tomato soup with noodles sounds pretty familiar at first. However, we have once again been inspired by China’s diverse cuisine and that is why today’s creation impresses with decorative egg threads, leeks, ginger and nutty sesame oil. There is also a fried chicken breast fillet, tastefully refined with sesame seeds and a touch of soy sauce. That’s something, isn’t it? Cheers to the culinary variety!

🇵🇭PORK SHANGHAI WAN TAN SOUP My VERSION

👩🏻‍🍳Authentic Shanghai-style dumplings filled with pork and vegetables, cooked in vegetable broth with carrot, Bok Choi, beans sprout and chopped chive plus a drizzle of sesame seeds oil. Just simple as that. For a rainy day outside warm hearty soup is enough to satisfy our tummy.

🇵🇭TOFU-MISO SOUP 🥣

Hello there! It’s Sunday again, that means souSp 🥣 day. So for today’s soup here is your recipe. My simple tofu-miso soup, without Dashi because I don’t have stock at home. I used miso paste the brown one. And since miso is already salty I don’t add soy sauce at all.

My Tofu-Miso Soup

12ml Miso paste

150ml hot Water to dissolve miso paste

1/4liter boiling Water for soup or vegetable broth
