My CRACKLING BACK FAT CHICHARRON

Try this back fat crackling chicharron with a “guilty pleasure”! Why? Because if you are suffering from Diabetes, fatty liver and hypertension this is not for you. Not for me either, but for family of course for their snack. This was the fat that I removed from the meat I prepared for BBQ last weekend. GINATAANG BAYABAS/ GUAVA in COCONUT MILK

This recipe is from my late uncle from Bicol who inspired me to try it. These two versions are totally different. The first one I added small potatoes, tapioca pearl, banana, corn kernels with brown sugar and bata de coco of course cooked in coconut milk. While the other one is more on guava pure guava with ginger, salt and brown sugar but not too sweet. Then I ate it with cold rice, the way my uncle used to eat it served as viand for him. But for me, I love my version as a dessert or for in-between not as viand.

YOU NEED…….

6pcs. Guava, ripe without seeds and skin (peeled)

250g small Potatoes 🥔

400ml Coconut Milk

Brown Sugar

Some Salt

Thumb-sized Ginger

200g Tapioca Pearl

3pcs. Banana

1can Corn Kernels

1glass Nata de Coco

half teaspoon Food Color, Orange (optional)

👩‍🍳It‘s time again for a really delicious soup! You don’t want to say no to all of the harvested cauliflower cream soup, which is refined with cream fresh and nutmeg and served with delicious smoked trout fillet? Just! Good for cold weather like today. Served with spelt bread.

TAPIOCA PEARL in COCONUT MILK or “GINATAANG SAGO”

👩‍🍳Here I cooked tapioca pearl in coconut milk with corn kernels, small potatoes, banana and added sugar and purple yam extract to have a purple colour as a sweet tooth for today. It’s been a while seen I prepared this sweetened tapioca pearl. Tapioca or tapioca starch is an almost tasteless starch that is made from the processed and dried cassava root. … Tapioca can be used as an ingredient in cooking, similar to potato or corn starch or sago. As we all know, Tapioca pearls are made from the starch of manioc, the roots of a shrub that was originally native to South or Central America. The raw pearls must be cooked before consumption. Tempeh the Indonesian classic is very well known, especially for vegan and it is definitely worth getting to know the meat substitute, which is particularly rich in protein! Today, the product is no longer just made frozen fermented soybeans, but also from regionally growing organic lupins. A real discovery meal with green beans in a spicy coconut sauce, light basmati rice and a crispy salad served to my family today for them to try too. I got good feedback and added to our family preferences. You can try it also with this recipe.

VIKTOR ADLER MARKET | CHICKEN FEET and VEGGIES

👩‍🍳Every Saturday I used to buy fresh vegetables from the farmers in Viktor-Adler Market at 10 district of Vienna near us. Besides, that you have the opportunity to visit the farmer’s market during the weekend where you can find fresh fruit and vegetables, wine and other products offered by the local farmers. Here I got some fresh Chilis, Carrot, Cabbage, Asparagus, Parsley, Potatoes, Onion Scallions and Chicken feet for only 2 euros per Kilo. The stands here is a large extent in the hands of Austrian distributor, but also Greek, Indian, and especially Turkish businessmen as well as Chinese can find the be find here the entire market in the wonderful aroma of fresh goods. The market named after the Austrian politician, name Victor Adler (June 24, 1852, Prague – November 11, 1918) was an Austrian Social Democratic leader.

Chicken feet are eaten in many countries. My hubby‘s auntie she usually cook chicken feet in their soup with lots of vegetables. In the Philippines all about Chicken can be eaten like liver, intestines, or goblet and feet. For some people maybe considered fear factor food chicken feet but not for others just like us. Here in Europe you could buy it almost everywhere. Fresh or frozen. But this one we got at Viktor Adler Market today. They said it is naturally rich in collagen, which is beneficial for looking youthful so I have to cook this regularly.🤪

SPRING WALK in BELVEDERE | JEN‘s PEAS & MINCED BEEF

We had spring walk in Schloss Belvedere with Jen (niece). A masterpiece of total art, Schloss Belvedere is one of the world’s finest baroque palaces. 

👩‍🍳Whether fresh, canned or frozen; Peas are very healthy. They belong to the genus of legumes and contain a lot of protein, valuable minerals and trace elements. They grow up in long green pods and are harvested flat as sugar pods. If you let them ripen, wonderfully digestible peas grow, which are then freed from the pod and processed further. Here in Europe we harvest the peas from June to August. From February to June you can buy them frozen or canned. Peas are often used for stews, soups or casseroles. Jen (niece) sautéed it with minced beef added bell pepper, zucchini and carrot. Healthy and good with green peas!
