NO-BAKE CHEESECAKE with INCABERRIES TOPPING

You can also conjure up a super delicious cheesecake without an oven I‘ll show you how easy it is. Cake without baking, in my opinion, they are not so good for baking because they are very badly damaged in the oven due to high water content. Never mind what are the so-called „no bake“ cakes for! No-bake cakes, as the English name suggests are not baked. They usually have a rather thin base and refreshing cream spread over it, which then sets by cooling it in refrigerator. Often, the no-bake cakes can be prepared really quickly and personally, I particularly like the fact that you save yourself baking and looking back in the oven. Today I conjured up a no-bake cheesecake with very fresh Incaberries topping. The biscuit base is wonderfully crispy, without sugar added in it.

YOU NEED…….

150g grated Biscuits

60g melted Butter

150g Incaberries

2tbsps Lemon 🍋 juice

2 cups of Whipped cream

2 cups of Mascarpone

150g Sugar

Sunday afternoon snack, apple strudel plus a Starbucks mug of coffee gave me a possitive vibes! My Starbucks mug brought to me by my daughter from Stanbul, Turkey early 2014. Beside from tea lover sometimes I drink coffee too with hubby, just like today I baked apple strudel for snack and my hubby prepared coffee for us. 🙂

This is my third collection among Starbucks mug. Many Starbucks fanatics out there are already familiar with the underground movement of collecting Starbucks Mugs. For sure there are thousands of people collecting these mugs all over the world and I am one among them. Mug is from Starbucks as souvenir from Barcelona last October 2014. My fourth mug from Starbucks direct from Spain.  The mug which will be featured on 9th Day was my third mug from starbucks. Having a starbucks mug at home and with our brunch, is not just like seating inside a starbucks branch with coffee task and service and a place to rest for a few minutes.

Another Starbucks mug which was brought to me by my daughter in December 2014 from Prague, Czech Republic. She and her best friend stayed for a weekend there and enjoyed the city for just two days. Travelled by car for about four hours excluding rest or break.

My second mug from Starbucks. The first Starbucks Branch in Czech was opened on  January 22, 2008 in Malostranské náměstí. Their people claiming that not just passionate purveyors of coffee, but everything else that goes with a full and rewarding coffeehouse experience. I love this edition because of Candy Cane Handle ❤ ❤ ❤
With this mug I love to have my cafe latte. Traditionally the cafe latte is a ratio of two parts coffee and one part steamed milk, mine is the other way around two parts steamed milk and one part coffee. LOL… That is the reason why my doggie Riyanah loves it too.

My first tea mug for this new year 2016. A souvenir from London brought to me by my son as a memento of his stay at Cambridge way back year 2010. Modern mugs, which are most commonly used for coffee or tea, likely envolved from beer steins. I love mugs because of their size, have thick walls and flat bottoms.

Enjoying my black tea with milk. Just like Indians sell very strong tea with condensed milk on street corners, as “Pick-me-up”. They said would be better for our health if I drink with honey and lemon, like Russians. Sometimes I drink green tea with nothing added like so many Japanese and Chinese. Specially during meal time in winter season. When it comes to food and health, it is becoming increasingly difficult to follow all studies advice. I just go with my instinct, a mug of black tea with milk I find it relaxing while seating on my bed corner with my notebook in pajama.

PRESENT FROM MOTHER IN-LAW

I love Filipino green leafy vegetables. My mother in-law knows this. Either boiled for salad, cook with fish, meat and sea foods as well as side dish no problem for me. The reason why she send us these food stuff down here with dried fish (Dilis, pusit and Tuyo) namely, dried anchovy, dried sardines and dried squid so with dried jute leaves (Saluyot), dried horseradish (Malunggay) and dried bitter melon leaves (Ampalaya).

Through the kindness of hubby’s niece we got it. Thank you so much Inang! It is so wonderful to be rememebered by family way back home in so many ways like this. Family isn’t always blood. It is the people in your life who want in theirs, the one who accept you for who you are. The one who would do anything to see you smile and who love you no matter what!

NOCHE BUENA 2014

In the morning hubby, our daughter and I we made some shopping for our noche buena and pick up our traditional  fresh christmas tree infront of the church where the kiddos graduated from elementary before,  where they sell this trees.  The custom of the Christmas tree developed in early modern Germany.

Hubby did his yearly job of decorating it and every year is different. So this is our christmas tree for this year 2014!   He decided to have a small christmas tree this year. CHRISTMAS is an unique time or year. Christmas tree is a prime part of christmas season. One of the more enjoyable parts of Christmas other than opening gifts of course is going out to find the perfect tree and decorating it.

RACLETTE- a spcial treat not only during festivals or holidays.  We had the Raclette on Christmas Eve. All raclette ingredients can be prepared easily and when the time comes, you can sit comfortably together and spend the whole evening with food. Anyone can fill his raclette dishes according to their taste. We had this raclette grill in the center, as seen in the photo above to it’s frame a heating coil is mounted. Under this spirals space for small pans in which the raclette cheese is melted. We had chicken fillet, beef meat and pork meat. Also different kinds of cheese, button mushrooms or champignon, spring onions. apples, cherry tomatoes, cold cuts and small red radish.  For sauces we got two different sauces with barbecue and garlic sauce. Hubby had it with his steamed rice while kiddos and I with sliced brown bread.  It was fun doing this the whole night long while watching tv 🙂
