🇵🇭LECHON PINAKSIW NA ULO NG BABOY | LECHON PORK HEAD IN SOUR SOUP SAUCE 👩🏻‍🍳iCOOK

👩‍🍳Delicious leftover Lechon. It’s not a holiday season at home, it’s the month of June 2022. The month wherein we celebrate the commemoration of our Emancipation day as Filipino we hardly spent this with friends here in Vienna. Because of the nature of our work. Most of the time we are on duty. tomorrow June 12, 20222 we will spend it at home with my daughter and my hubby. This was the leftover from my Pork head Lechon. I don’t want to reheat it because the good parts were already consumed, and what is left are the lean meat parts and occasionally some meaty bones. So I decided to cook it as Lechon pinaksiw for today’s lunch.

👩‍🍳Paksiw is the generic name for stews made with vinegar. To make paksiw na Lechon, the meat is slow-cooked in a mixture of vinegar, soy sauce, peppercorns, bay leaves, sugar which I did not add, salt, and whatever is left over from the sauce. It sometimes happens that there is no leftover sauce. In which case, some substitutions may be in order. One option is to use commercial Lechon sauce available bottled in most supermarkets, just like the one I used here from Mama Sita’s Lechon salsa. Another option is to use a can of the liver spread diluted in a cup of meat broth. Or, if you have a lot of leftover Lechon, you may choose both options and mix them all together.

🇯🇵HONEY PORK MEAT PAN-FRIED

Thinking what to cook today? Try this honey pork meat pan fried served with boiled broccoli. My hubby can’t live without rice, so he got rice also. I used the shoulder part of pork meat then thinly sliced. Happy Prepping and Guten Appetit!😋

YOU NEED…….

500g Pork meat, shoulder

1 head Broccoli 🥦

3tbsps Olive oil

1pc Onion

4 cloves Garlic

a thumb-sized Ginger

3tbsps Balsamic Vinegar

3 tbsps Soy Sauce

2tbsps Maple 🍁 Syrup

1and1/2tbsps Honey

PORK AND ZUCCHINI STEW

Inspired by my hubby, our dinner last night, something craving for Zucchini!
Also one of my creation and purely experiment!

YOU NEED…….

* 1 kg Pork
* 4 pcs. Zucchini
* 500 g Tomatoes
* 1 Onion
* 1 Green bell pepper
* Fried or Garlic salt
* 2 tbsps. Flour
* 3 tbspsOlive oil
* 1 tsp. Oregano
* some chopped Basil leaves (fresh or frozen ones)
* salt and pepper

HOW TO…….

*1.) Season pork with pepper, fried or garlic salt and flour.

*2.) Heat a casserole or pan. Pour some olive oil, saute the meat until light brown. Add tomatoes, oregano, salt and basil leaves.
Cover for 10 minutes.

*3.) Stir, over medium heat cook until meat is tender. When meat is tender, add zucchini continue cooking until done.
Serve hot with rice. Take it from me baby:-)

ROAST PORK WITH SAUCE AND CROQUETTES

Another purely experiment and creation from me 🙄

Cooking pork, like with other meats, is largely determined by the cut to be cooked. Cuts from the lower leg and shoulder, where the muscles have the most exercise, are likely to be tougher and are more suited to long, slow cooking, whereas cuts from the back tend to be lean and tender, making them ideal for quick cooking.

YOU NEED…….

* 5 pcs. Pork scalope
* 1 pack frozen Croquettes
* 3 pcs. Carrots
* salt
* some Cilantro or Coriander, roughly chopped
* 1 onion
* some olive oil
* 3/8 liter of water
* 1 pouch Knorr Roast Pork Sauce (ready mix)

HOW TO…….

* Let’s begin by pounding meat and season with salt and pepper.

* Heat a pan, pour some olive oil and fry meat both sides. Meanwhile peel and slice carrots, onion peel and cut into cubes, cilantro wash and roughly copped.

* In the same pan, saute onion, carrots and cilantro or coriander. Add 3/8 Liter water, cover until carrots is tender. Then dissolve the pouch of knorr roast pork sauce, stirring until the sauce thicken over medium heat. return the meat and cover for about 5 minutes.

* Meanwhile croquettes can be cook in Microwave. Just follow package instruction. serve hot with croquettes.
