🇵🇭 EGGPLANT-TOMATO OMELETTE FOR BRUNCH 👩🏻‍🍳iCook 

👩‍🍳This was my Saturday brunch at home alone. Just what is on hand, eggplant, scallions and tomatoes. I call it omelette. I cooked it quickly over higher heat from the stove and did not fold it. I ate it with dark toast bread which is soft. They said another term for an omelette is a crustless quiche. This omelette is finer, of course, suited to a quick breakfast or brunch. So take it away from my kitchen folks. It is easy, quick and yummy.

👩‍🍳My omelette stuffed with mushroom and tomato and side dish boiled broccoli. Today’s brunch before going outside to get some boxes which I need next Sunday for fleamarket. There are lots of omelette recipe online but this is according to my preference as diabetic there are factors that I should consider in prepping my own meal. Once you see me using linseed oil that means the food is intended for me. Just like what I am always saying; “Eating as Medicine.”

half a head Broccoli

2tbsp Linseed Oil

100g Mushroom, I used Champignon

1 Tomato

1 Scallions

Salt to tase

2 Eggs
