ABOUT, BEEF MEAT, PORK MEAT

SIOMAI (My Version)

Siomai is the popular and generic name that Filipinos call steamed dumplings. The most popular filling is pork but beef siomai is not too uncommon.

YOU NEED…….

* 750 g ground pork or beef
* 1/2 cup of shrimps minced
* 2 onions finely chopped
* 1 medium carrot grated
* 1 head garlic peeled finely minced
* 2 thumb-sized of ginger peeled grated
* 3 tbsps. soy sauce
* 4 tbsps. oyster sauce
* 1 tbsp. sesame seed oil
* 1/2 tsp. oregano
* 1/2 cilantro (koriander) powder
* 1 tsp. mustard
* 1 egg beaten
* salt and pepper
* Wanton wrapper

FOR DUNKING SAUCE:
* Soy sauce with Lemon or Soy sauce with “Kalamansi”

HOW TO…….

1.) It is traditional to add half a cup or so of uncooked minced shrimp to the filling. Just like what I did.
Nothing mysterious about making the filling — just mix everything together.

2.) To make the siomai, place a teaspoonful of the filling at the center of a wrapper and gather the edges together. Repeat until you have the desired number of siomai. And steam for 40 minutes. Serve with dunking sauce soy sauce with lemon or kalamansi. Enjoy!

MIX GROUND MEAT (GINILING)

Remember this dish? If you are Filipino and grew up in the Philippines, you would. If not, check out a cheap carinderia or turo-turo in any street corner in Metro Manila and chances are you’ll find it. It’s cheap, it can feed a crowd depending on three variables: how much rice you servewith it; how much potatoes are in the dish and how salty you make the dish. It has raisins to satisfy that infamous Filipino sweet tooth. Now do you remember?
I never cooked it before. Well, now I have… If there’s leftover I will mix it with tomatoe sauce and pasta to become a new dish!

MIX GROUND MEAT (GINILING)

YOU NEED…….

* about 1 kg ground meat (pork or beef) low fat is better
* 1 large carrot, peeled and cubed
* 1/2 green bell pepper, seeded and cubed
* 1/2 red bell pepper, seeded and cubed
* 1/2 cup raisins
* 50 g green peas
* 4 cloves garlic, peeled and minced
* 1 red onion, peeled and finely chopped
* 1 tomatoe, finely chopped
* 3 tbsps. tomatoe paste
* 2 tbsps olive oil or any vegetable oil
* 1tsp. powder broth or broth cube
* salt and pepper to taste

HOW TO…….

—Heat a big pan, add olive oil and saute: onion, garlic, tomatoe, carrot and ground meat. Regularly break pork into smaller pieces with back of spoon, continue to cook until ground meat turns to brown.
