During Lent season in the Philippines specially in the provinces, the so called „KAKANIN“ is very famous and usual seen by Filipino parties and celebrations. This serves not only as dessert but also for snacks or merienda. This is our snack, added purple yam powder and Ube flavor for a change and you know what, it turned out sooo… SUPER!

Banana pancakes are easy, yummy and quick to prepare. Taste wonderfully juicy too. The best thing is that you can use overripe, brown bananas 🍌 for this pancakes 🥞 that most people don’t want to eat anymore. 🤪 I got this small bananas the other day from Lidl Supermarket seems nobody cares or want to eat it. These was the rest from my daughter’s smoothie which I also made for her.

👩‍🍳What is this? Is a Thai dessert, small balls made out of glutinous rice cooked in coconut 🥥 milk with sugar. Others may add purple yam. Here I added purple yam powder, boiled tapioca pearl, and Nata de coco. Happy prepping everyone. This what COVID-19 brought us. At home I’m always trying recipes around the the world not only our very own cuisine.

🇵🇭DIAN‘s (daughter) SNACK

Turon or Banana Lumpia, as all may know there are different ways, tricks and version of this sweet snack from my country. I for one I did tried and experimented using all variety of bananas that I know. So here‘s another component this time with honey and vanilla flavored using vanilla essence for flavoring.

I remember the last time I was in Barcelona I ordered this in that restaurant where we had our linner as dessert after my ramen 🍜 was heavenly good!😋 Now this is my version made with love direct from my kitchen.👩‍🍳

BROWN BREAD FOR DIABETIC

Today is a public holiday in Austria!
Corpus Christi, is in Austria not only a feast of the Catholic church year, but also a public holiday. This is always celebrated on the Thursday after Trinity Sunday. Linguistically oriented to the holiday of Corpus Christi on the Latin “corpus christi”, and was in the Middle High German language translated VRON (of the Lord) lîcham (abdomen). From this it is already deduced, which is celebrated at Corpus Christi: the bodily presence of Jesus Christ through the sacrament of the Eucharist, following the example of the Last Supper.

Baked Corn Brown Bread

A healty brown bread for dabetic like me. Today my daughter baked a corn brown bread for my merienda. As a snack with a little butter, or just by itself, but I bought this herring fish with garlic in a bottle from IKEA yesterday and I found out it goes with it perfectly. With a sliced red bell pepper and some small radish and a cup of coffee made my Thursday afternoon perfect on this holiday.

BAVETTE WITH PALABOK SAUCE

Barilla Bavette are an imaginative version of spaghetti, but unlike them they are flat with a slight curvature. Among the long formats of pasta made from durum wheat semolina Bavette are therefore particularly suitable for the flavor development of sauces. For the sauce can be captured from the vault, which then reproduces the palate the full diversity of taste.
Bavette stay with lighter and delicate sauces always al dente.

This was served for brunch at home. And for afters fresh strawberries as you could see on picture above 😉
Until the mid of fifties, a distinction between pasta from Naples and pasta from Genoa, the major port city in northern Italy. Naples is generally associated with spaghetti, pasta of the most famous places in conjunction. The cradle of Bavette, however, was Genoa.
As the leading Italian manufacturer Barilla has made known the Bavette with their regional origin also. Today, these places Pasta is popular throughout Italy and around the world, because they flawlessly with all vegetables and fish sauces and all traditional preparations of Mediterranean cuisine.

YOU NEED…….

THIS SERVES 4-6 PERSONS

* 500g Bavette
* 250g Seafood (Meeresfrüchte/ Shrimps, small squid, small mussels, and small clams)
* Canola Oil
* Spring Onions for garnishing
* 6 cloves Garlic, peeled and minced
* 1 pc. Onions, chopped
* 6 eggs, hard-boiled peeled and sliced
* 1/2 cup flaked Tinapa
* 1/2 cup pounded Chicharon
* Patis to taste (Fish Sauce)
* For the sauce to save time you can also use the one from Mama Sita’s (2 pouch) or Make your own Sauce with shrimps and 4 cups chicken broth and 2 cups shrimps juice from pounded shrimp shell!

HOW TO…….

* Cooked Bavette according to package instruction or al dente.

* For toppings: Heat a pan, pour some Canola Oil. Saute onion, garlic, and seafood. Pour in chicken broth/ shrimps juice and bring to boil. Patis to taste. If done mix the sauce with Bavette. To served arrange Bavette in a platter, topped with sauted seafood, fish or tinapa flaked, sliced eggs, chicharon, spring onions and with 1 tablespoon fried garlic. For etra fine taste, with sliced lemon or kalamansi. Enjoy!

QUARK BALLS

Inspired by one of my colleagues who loves to bake. She gave me this recipe which is so easy to follow and you’ll get a good idea too. I just made some changes with her recipe of course according to my preference, most specially when it comes to sugar since I am a diabetic!
I used low-fat curd (cheese) or lowfat quark. And 250 g sugar is just too much for my taste. I only used 150 g which is absolutely sufficient.

QUARK BALLS

YOU NEED…….

* 1/2 kilo or 500 g Flour
* 750 g low-fat-Curd (cheese) or lowfat Quark
* 150 g Sugar (original recipe 250g Sugar)
* 2 Eggyolk
* Baking powder
* Vanille Sugar
* Pinch Salt
* some Lemon juice

HOW TO…….

* Mix quark with lemon juice, eggyolk, sugar, salt and vanille sugar wth electric hand mixer.
* Blend baking powder to flour then slowly add to quark mixture stil using electric hand mixer.
* Then form into small balls see to it not too thick otherwise inside is not done.
* Heat some vegetable oil and deep fry until golden brown. Let the rest of oil dried on a kitchen afterwards rolled-in sugar, that’s it and ENJOY Folks 😉

ADOBONG TUYO at SINIGANG NA BABOY

This is not the one called “PICHI-PICHI”. Yes, it is steamed cassava or manioc. I will try next time the Pichi-Pichi. Was intended for merienda today but my daughter insisted to have it right now after lunch. So I did, anyway it took time until I have the six Lanera full and finished.

My STEAMED CASSAVA

YOU NEED…….

* 400g grated Cassava or Manioc
* 4 tbsps. Butter
* 3 cups Sugar (I used brown sugar)
* 2 cups grated Coconut or strips

HOW TO…….

GRATED CASSAVA IN LANERA

I used “LANERA” for steaming which was brought by sister in christ for me from the Philippines the last time she was down there!

STEAMING CASSAVA IN LANERA

Brush the “Lanera” with melted butter. Mix all ingredients together. Pour in the mixture in Lanera and steamed for about 15 minutes. Serve with freshly grated coconut or coconut strips. Here I di used the dried one which you can get from Merkurmarkt!

IKEA RESTAURANT (Swedish Food)

We brought the whole family to the IKEA Restaurant for a delicious meal at an affordable price. After a half day shopping. They have a tasty special offer cooking at the restaurant each day of the week. Offers and menu options may vary by store like here at Shopping City Süd (South) in Vösendorf!

For my lunch I got chicken breast with mushrooms sauce and bread dumplings.
Main course and hot meals, the restaurant is in the middle of the store.

Besides hot meals, the restaurant offers lighter meals like salads and sandwiches with a Swedish flair. Cookies, cakes, desserts.

Lots of good desserts to choose from for those who think a meal is not complete without a sweet. Above here with mix fruit salad and sweet.

Like their Swedish meatballs with mashed potatoes (picture above) this was my daughter’s lunch, and down here is with french fries was my son’s choice. Knäckebröd and six kinds of herring. Shopping is hard work, and while pickled herring may not be at the top of everyone’s wish list at mealtime unless you’re Swedish, but I’m not…lol…we’re pretty sure you’ll find something you like on their menu. Fresh, tasty, well-prepared and affordable is theirr food philosophy.

One more thing…stopping by the bistro on our way out and refuel before we hit the road. With their hot dogs, ice cream and more. Free refill drinks at IKEA, on coffee, tea and soft drinks too. What more could you ask!
