Vine spinach or Alugbati to us Filipinos. As I’m always mentioning I love green leafy vegetables, and this is one among them. Alugbati can be added to any other vegetables like here I got okra and chili. The tuna fillet is from the can and instead of fresh tomato, I added tomato paste. It Turned out good as you could see the sauce is so inviting. Hubby says alone the sauce is enough as viand. Simple cooking but satisfying.

👩‍🍳Since last week I was craving for this. Luckily my hubby bought me alugbati in Tagalog, vine spinach or malabar. So craving satisfaction fulfilled today with sotanghon and Ligo sardines from the Philippines. Served or I ate with brown rice. Simple things that make me happy. Happy prepping people. 1tbsp Linseed Oil

a bunch of Alugbati or Malabar Spinach (Vine Spinach)

1 red Onion

3 cloves garlic

a thumb-sized Ginger

Salt and Pepper to taste

1 can Ligo Sardines, product from the Philippines (or 2 cans if you want more)

1 Liter water

200g Sotanghon or Mung Bean thread
