Vine spinach or Alugbati to us Filipinos. As I’m always mentioning I love green leafy vegetables, and this is one among them. Alugbati can be added to any other vegetables like here I got okra and chili. The tuna fillet is from the can and instead of fresh tomato, I added tomato paste. It Turned out good as you could see the sauce is so inviting. Hubby says alone the sauce is enough as viand. Simple cooking but satisfying.

“Eating as Medicine“ Malabar spinach is an edible vine that has a thick, crunchy texture and lemon-peppery flavor. Vine spinach or Alugbati to us Filipinos. As I’m always mentioning I love green leafy vegetables, and this is one among them. Alugbati can be added to any other vegetables here I got okra and Tuna fillet from a can. Added tomato paste instead of fresh tomato, seasoned with fish sauce. Quick easy meal prepping. Of course, eating with rice because we are Filipino.

🌍🌏SHRIMPS AND MUSSELS IN WINE👩🏻‍🍳iCook

👩‍🍳Cooking 1 kg mussels for 2 people, nothing more is left determined. We enjoyed it, hubby and I. I love the sweet taste of the soup. Nobody can resist this recipe for mussels in white wine. Use fresh produce from the fish market. Mussels are mollusks and fall under the seafood category in the kitchen. But mussels have nothing to do with fruits – the sea creatures are much more small animals that feed on plankton. The small creature has been used as food but also as a supplier of jewelry (pearls) for many hundreds of years.

YOU NEED…….

1kg Mussels

500g Shrimps

2 cups of White wine, I used wine for cooking Risotto and also good for seafood, a local one.

some Olive Oil or any Vegetable Oil

some Butter

5 cloves Garlic

3 pieces of small Carrots

1 stem of Lemon Grass

1 Green Chili, spicy (optional)

1 Red Onion

2 pieces of Scallions

Parsley a handful, chopped (I used a frozen one)

Tablespoon dried Oregano or more if you like

Salt and Pepper

Chili-Paprika Powder, spicy (optional)

👩‍🍳This recipe is prepared in a short period of time, together with minute steak and “kangkong at Pusit ( Water Spinach & Squid). For dinner of two, at home. I love Sotanghon the reason why I always see to it is that I have enough stock in my pantry. Sponge Gourd is also good for diabetics serves to lower the sugar levels both in the blood and urine and is rich in fiber too. Studies say boosts Immune System. So why not often cook “Patola” at home.

Tuna Fillet from can

Scallions

THINLY SLICED PORK LOIN IN UMAMI SAUCE A HOMEMADE ORGANIC SAUCE TASTE OF LETTLAND

👩‍🍳I found this stand at the farmers’ market in Naschmarkt selling different homemade organic sauces. I got myself some of their sauces for me to try at home. And today I tried their Umami sauce for my pork loin with cauliflower rice and scallions. It turned out good I added some honey too. 🇪🇺CREAMY FETA CHICKEN THIGHS FILLET PASTA (SPAGHETTI) 👩🏻‍🍳iCook

👩‍🍳Popular history says that it was invented in China and that Marco Polo brought the knowledge of this food to Venice. The spaghetti Polo encountered in the far east was made from either rice flour or hard wheat flour. Italian dried spaghetti is made from durum wheat semolina, but outside of Italy, it may be made with other kinds of flour. Here is another pasta spaghetti of recipe I want to share with you out of my preferences and creation from my humble kitchen.

YOU NEED…….

250g Spaghetti

150g Chicken Thighs Fillet

200g Feta Cheese

a handful of Green Peas, frozen or fresh

a cup of White Sauce, alternative milk but make it thicker mixing with Cornstarch

Basil Leaves, dried or fresh

1 Onion

4 cloves Garlic

some Olive Oil

Chili Flakes, optional

Salt and Pepper

🇵🇭HAPUNAN-DINNER-ABENDESSEN WITH MY HOME PREP MEAL

👩‍🍳The best time for dinner is between 5pm and 7pm. This gives the stomach and intestines enough time to digest the food they eat before the metabolism switches to sleep mode at night. The stress of the day is over, and the work is done. But in our case, if you are working from 11:30 before noontime until 10pm then you travel on the way home we need almost 30 minutes. Arrive at home almost half an hour before 11 pm then I have to cook for dinner. But luckily tonight I was already at around 6 pm so I have enough time to prepare our meal. So for tonight’s meal every Filipino, sinigang with Sea Bream and Shrimps, and fried squid. For dessert, I made a fruit cocktail with sour cream and grapes. Hubby is happy and of course my tummy too. I love the vegetables that it goes with this viand. happy prepping everyone.

YOU NEED…….

1 Sea Bream

2oog Shrimp

a bunch of Spinach

3 Chilis

1 Tomato

1 Onion

Scallions

2 pieces of eggplant, small

some Water

2 tbsps. Sinigang Seasoning

Salt to taste

FOR DESSERT:

GINATANG TALONG AT PUSIT – EGGPLANT IN COCONUT MILK WITH SQUID 👩🏼‍🍳iCook

👩‍🍳Eggplant has many health benefits to offer. Good for diabetics may help cells do a better job of processing sugar just like me. And best of all low in calories and sodium and is a great source of dietary fiber. I often eat eggplant. Today I cooked it with squid and a bit spicy. 👩‍🍳The yellowish rice of Iloilo because of turmeric powder has to reach Vienna today. Remember my late mother who is fun of cooking this dish during all saints day or in Tagalog But my version is totally different from “Pista ng Minatay”. But my version is totally different from her. I don’t add meat like a chicken. I love this just purely kind seafood added. The Ilonggo’s undying love for their famous glutinous rice dish is a complete meal actually. 3pieces Frankfurter Sausage

🇵🇭DAING NA BANGUS (Milk Fish)- LUGAW (RicePorridge) WITH PORK LOIN IN UMAMI SAUCE & TOFU – SAUTEED CHAYOTE👩🏻‍🍳iCook

👩‍🍳”Kamayan na”, eating by hands no fork and spoon. Fried daing na Bangus, boiled okra and eggplant, spring onion and tomato, bagoong with chilli, and basmati rice. For breakfast, rice porridge (lugaw) topped with tofu and pork loin in umami sauce. Then my sauteed chayote with broccoli, carrot and ground meat, seasoned with mushroom sauce for lunch and dinner too. I love it, very Filipino. That’s all for today’s meal prepping at home.

TAGALOG: 👩‍🍳Pagkaing kinalakihan kung saan naging tao. Masarap at masustansiya rin na nakakapagbigay tulong sa ating kalusugan. Huwag lamang sobrahan gaya ng bagoong. Maalat na hindi maganda kung masobrahan nang kain. Dahil sa alta presyon o mataas na blood pressure ganon din sa puso. Bawat bagay na sobra ay hindi maganda sa kalusugan. Ah! basta masarap lahat ito. Nakaka miss kumain nang ganito lalo na kapag sa ibayong dagat ka naninirahan tulad ko. 🌏MALUNGGAY NOODLE SOUP AT HAM -MORINGA NOODLE SOUP WITH HAM 👩🏻‍🍳iCook

👩‍🍳Because of curiosity, my first time to try this moringa noodle which I got from Himalayan Shop. Cooked in a soup and topped with sliced ham which I boiled in Orange juice from a Tetra pack. Served with half boiled egg and with vegetables too. Never stop me to experiment with different food fusions. Discovering a lot of new ingredients (for me) from the market, but prepared using flavours inherent to another culture is the considered form of fusion cuisine just like this.
