So what is this all about?

Vegetable and turkey patties with noodle

It is about yesterday’s leftover turkey patties. Now I cook it with zucchini and carrot added rice vermicelli (noodle) also chopped parsley turned into fresh dish. So happy and I Love leftovers because you can turn it into other dish and zero waste. There’s a lot of endless ideas for reinventing leftovers. Wether it is a soup, frying, or even mix it with vegetables.

YOU NEED…….

Leftovers Turkey patties (sliced)

40g Rice Vermicelli (Misua)

2pcs. Zucchini

2pcs. Carrot

2tbsp Linseed oil

1/2 Liter Vegetable broth

some Salt

Chopped Parsley

5 cloves Garlic

1pc Onion

🇮🇹FUSILLI con POLPETTINE (Fusilli Pasta with Tiny Meatballs)

Now cooking just like in Italy, but not exactly it is iCookiTravel‘s recipe and you are in my world. Using full grain-Spelt pasta, Spirelle or spiral noodles are often called in German and homemade tiny beef meatballs. This recipe yields for four persons. YOU NEED…….

500g Full grain-Spelt

1pc Onion

1pc Carrot

1pc Zucchini or Courgette

2tbsp dried Basil leaves

some Water

390g peeled Tomatoes, chopped

1tbsp Beef broth powder

1tbsp Coriander powder

200g Cheese of your preference

2tbsp Coconut oil

Some Salt and Pepper

FOR MEATBALLS:

500g minced Beef

2tbsp chopped Chive

1pc Egg

some Salt and Pepper

2tbsp Tapioca flour

2tbsp Coconut oil to brown meatballs

2pcs. medium-sized Onion (I used 1 red for burger and 1 white for patties)

3 cloves Garlic

1tbsp. Tomatoe paste

1/2 tsp. Cinnamon

1tsp. Paprika

some Salt

some Olive oil

1/4 head Iceberg Lettuce

4tbsp. Yogurt 1.5% fat

🇵🇭🇪🇺MY VERSION OF BURGERS with TOFU and GROUND MEAT

This is onother request by my daughter who’s craving for tofu burgers.
Kid friendly BURGER Recipe: This quick, easy, burger recipe is a sure way to get your kids or anyone else to eat tofu. Tofu burgers hold together well, and are great for grilling too.
For a light meal, skip the bun, and serve tofu with ground meat burger patties with steamed veggies or a salad. Here I serve it with fresh mix salad and garlic-yoghurt sauce or dessing, my family loves it very much specially the 2 kids.

A Tip from me,— use leftover burger mix to make sloppy joes, or scambled tofu. Cold burger patties make great sandwiches. Improvise freely with the seasonings and the grains. But if you want onions, use them on the outside, not the inside – they make the mixture too wet.

YOU NEED…….

* 6pcs. extra firm Tofu
* 75g ground meat Pork or Beef (Optional, I added because of my kids preference)
* 1/4 c whole wheat flour or corn flour
* 1 tsp thyme, dried
* 1 tsp coriander or cilantro, dried or powder
* 1/2 tsp garlic powder
* 1/4 tsp ginger powder
* 2 tbsps Soy sauce
* 1 tbsp Worcestershire sauce
* 1/2 tsp salt
* 1/2 tsp pepper
* 1 egg
* some Canola or any vegetable oil for frying

FOR GARLIC-YOGHURT SAUCE OR DRESSING:
* 2 cups of Yoghurt
* 4 cloves Garlic, minced
* 1 tsp. Garlic powder
* some white pepper powder
* some salt

BIRTHDAY: FOOD SPEND FOR COLLEAGUES

For birthdays, it is common in my company that the birthday child brings a meal plus cake or dessert. As a celebration with colleagues.

SOTANGHON with SHRIMPS

Since they love my Sotanghon with chicken breast and shrimps, I always cook it for them about two and half kilo Sotanghon for fifteen people. Some of them tried to cook it at home I just gave them my personal recipe but everybody saying that it turned out not as good as mine. They would love to have it at work from me. 😉

LUMPIANG SHANGHAI

And not to forget the Lumping Shanghai and sometimes spring rolls. Most of the time they would ask me for spring rolls without ground meat. They also love my version pure vegetables in it. Like cabbage or pechay, carrots, mung bean sprouts (togue), potatoes, green beans and spring onions. I use to bring it alternately for option.

For cake this time my daughter baked a Guglehupf. It was her recipe for them to try.
We always have fun while eating and everybody are helping for setting the table everytime we have celebretion. Besides of celebration we also have our breakfast together whenever we have duty on Saturdays. Having fun and good time together while having our breakfast.

Dinner tonight, while 20% fbying (facebook), 80% cooking our dinner. After a very long Saturday at last I’m back in my kitchen 😛

Trottole al Pomodoro e Spinaci

Alex, my bff Dana’s daughter and Diana-Grace, my daghter’s dinner tonight!

YOU NEED…….

* 500g Pasta
* 150g Ground Meat
* 400g Tomatoes, whole and peeled
* 1 Red Onion, big, peeled and chopped
* 1 whole Garlic, peeled and chopped
* 2oo ml Red wine
* 1 tbsp. Butter
* 2 tbsp. Olive Oil
* 1 tbsp. Italian Herbs
1 tsp. Chili flakes
* 1 tsbp. Paprika Powder
* 3 tbsp. Ketchup
* some Salt and Pepper
* some Grana Padano, cheese/ grind

HOW TO…….

* Cook Pasta according to package instructions or “al dente”.
* Brown ground meat in olive oil. Then add chopped onion and garlic.
* Afterwards add paprika powder, tomatoes, italian herbs, chili flakes, ketchup and red wine. Let it simmer for 5 to 8 minutes.
* Adjust seasoning if necessary with salt and pepper. Served with Grana Padano on top 😉

MUSSELS WITH WINE and EGGPLANT TORTA

Cooking 1 kg mussels for 2 people, nothing more is left determined. We enjoyed it (hubby and I) because our two kids would not eat from it. ….. So now I have to cooked eggplant with ground meat and beaten eggs as eggplant “Torta”. That’s all I found in refrigerator for lunch.

FOR MUSSELS WITH WINE:
* 1000g or 1 kilo Mussels, cleaned
* 2 tbsp. Butter
* 2 chopped Scallions or Spring Onions
* 3 cloves chopped Garlic
* 3/4 cup white wine or less
* Salt and pepper
* 3 tbsp. Olive Oil

FOR EGGPLANT “TORTA”:
* 3 pcs. medium-sized Eggplant, washed and boiled
* 4 pcs. Eggs, beaten
* 150g ground meat
* 1pc. Onion, chopped
* 1 broth cube
* pinch of Salt
* 3 tbsp. Olive Oil

HAMBURGER FOOD COMBINING RECIPE

A very wonderful Hamburger Food Combining recipe I’ve tried out a few days ago, for the kids. The ground is very soft, but is immediately compact when placed in the pan. The best that goes with a ladle. The patties are super juicy, have all tasted the same and are moved into the standard cookbook.

My Hamburger Food Combining Recipe

I served it with my homemade potatoe salad and of course with rice.

YOU NEED…….

* 1 kg Ground meat
* 2 pcs. Onions, finely chopped
* 1 bunch Parsley, finely chopped
* 4 cloves Garlic, peeled and finely chopped
* Salt and Pepper
* 5 pcs. Eggs

HOW TO…….

My Hamburger Mixture

In a bowl mixed all ingredients. The ground meat is fairly soft.

My Pan-Fried Hamburger for Viand

With a Ladle portions in the greased pan-fry. They are compact immediately when they come into the hot fat. After a few minutes and turn on the other side also brown. Serve with potatoe salad and rice.
