👩‍🍳Eggplant has many health benefits to offer. Good for diabetics may help cells do a better job of processing sugar just like me. And best of all low in calories and sodium and is a great source of dietary fiber. I often eat eggplant. Today I cooked it with squid and a bit spicy. About 6 pieces of Squid, cleaned

400ml Coconut Milk

4 pieces of Eggplant

some Olive Oil

3 pieces of Green Chillis, spicy or not spicy according to your preferences.

1 Onion, I used Red Onion

Ginger

4 cloves Garlic

some Salt

Fish Sauce or Patis

👩‍🍳With the fried rice with vegetables, only good things end up on the plate. Broccoli packs plenty of health benefits. while chicken thighs provide plenty of protein power. And thanks to provitamin A, carrots are good for our skin. It’s one meal you can’t ask for more.

Sardines fillet is breaded with Tempura and served with homemade Achara from my niece. Of course with rice, because we are Filipino. Achara is made from grated unripe Papaya originating from my country- the Philippines. This dish is often served as an accompaniment to fried or grilled foods, such as roast pork also to fish.

👩‍🍳”Kamayan na”, eating by hands no fork and spoon. Fried daing na Bangus, boiled okra and eggplant, spring onion and tomato, bagoong with chilli, and basmati rice. For breakfast, rice porridge (lugaw) topped with tofu and pork loin in umami sauce. Then my sauteed chayote with broccoli, carrot and ground meat, seasoned with mushroom sauce for lunch and dinner too. I love it, very Filipino. That’s all for today’s meal prepping at home.

👩‍🍳Because of curiosity, my first time to try this moringa noodle which I got from Himalayan Shop. Cooked in a soup and topped with sliced ham which I boiled in Orange juice from a Tetra pack. Served with half boiled egg and with vegetables too. Never stop me to experiment with different food fusions. Discovering a lot of new ingredients (for me) from the market, but prepared using flavours inherent to another culture is the considered form of fusion cuisine just like this. Banana pancakes are easy, yummy and quick to prepare. Taste wonderfully juicy too. The best thing is that you can use overripe, brown bananas 🍌 for this pancakes 🥞 that most people don’t want to eat anymore. 🤪 I got this small bananas the other day from Lidl Supermarket seems nobody cares or want to eat it. These was the rest from my daughter’s smoothie which I also made for her.

Because of COVID-19 lockdown, everybody are at home. So devastating what’s happening now all over the world and sometimes I feel like paranoid with all these things on social media and news. Luckily option is here if I‘m busy in my kitchen, my happy place resetting my mind and mood into positivity or optimistic. Well, still in my kitchen the whole family will enjoy a hearty beef meat soup. With this recipe you round off your first lock down day lunch or dinner perfectly. 🇪🇺🇵🇭WHAT‘S ON THE TABLE

Throwback, some of my home food prepping during the time my cousin Gie and her son was with us. During their Europe vacation.

That was linner, the first meal I prepared for my cousin Gie and her son. Oven trout, salad, Sarma ( stuffed cabbage), and knuckle of pork (Stelze) and because we are Filipinos rice is a must!

Here again brekky with boiled Frankfurter, toast bread, strawberry in sour cream, coffee and tea. The time my cousin Gie and her son took their vacation in Vienna. Of course my doggy Mary and Riyad also on the picture.

My spaghetti requested by Noah, Gie’s son (cousin). Bolognese is the sauce I made for them with grana padano cheese plus salad and sliced apples. Someone requested for coffee and tea too.

Food memories brekky a la Pinoy (Filipino) too heavy never again! Imagine; fried rice, longganisa, fried tuyo, scrambled eggs, sunny side egg, and for dipping vinegar with chili spicy of course plus tea and coffee Jesus Christ! What unhealthy life style never again!

🇵🇭SWISS CHARD in SOUR SOUP with SHRIMP

There are various types of Chard, Mangold or Heirloom beet. The one I‘m cooking today they call it Swiss Chard. The leaf is thinner compared to the last one I cooked as side dish for my Tuna steak if your are following my VLANG.😂

I really love eating this green leafy vegetable (chard or Mangold) What ever you like to named it. It’s because for one reason loaded of fiber and my decrease Insulin resistance and lower blood sugar. My diabetes awareness. Trying to include in my daily meal prepping.

YOU NEED…….

200g Swiss Chard

500g Shrimp

1 Onion

1 Tomato

Salt and Pepper to taste

1/2liter Water

1tbsp Knorr „Sinigang sa Sampaloc“ (Knorr Tamarind Mix) you can use lemon juice instead if you don’t have this.
