BEEF STEW with BANANA BLOSSOM in COCONUT MILK

My second time to cook this dish. That was 2017 the first and the last time I tried to cook this. Inspired by my hubby during his birthday. I got told that eating foods rich in potassium like yellow bananas and banana flower will maintain a normal level of sodium in the blood and thus reduce and maintain a normal or near to normal blood pressure among hypertensive individuals like me. Next time I‘ll show you my version of „Ginataang Puso ng Saging with Shrimps“ in english Banana Blossom with Shrimps 🦐 in Coconut Milk. Stay tuned for it.

YOU NEED…….

500g Beef meat, you can add the one with bones, also gives more taste.

1 whole Banana heart

400ml Coconut Milk

1 Lemon for Lemon Juice

4 cloves Garlic

1 Beef Broth Cube

1 Liter of Water for boiling and make everything tender. I used pressure cooker.

1 Red Onion

Ginger about thumb-sized or more

Fish Sauce or Patis to taste

1tbsp Tomato paste

2tbsp Paprika powder

Pinch of Caraway seeds

1 1/2tbsp Vinegar

1/4Liter Beef broth

1pc Onion

1pc Carrot

1pc Zucchini or Courgette

2tbsp dried Basil leaves

390g peeled Tomatoes, chopped

1tbsp Beef broth powder

1tbsp Coriander powder

200g Cheese of your preference

2tbsp Coconut oil

What’s for dinner? Requested by my daughter crispy, simple and easy to prepare. Hubby bought 1kilogram fresh minced beef from Etsan store a Turkey Shop near us. Freshly cooked by yours truly again.😅

a bunch of Chive, chopped

A 15 minutes cooking was tonight’s early dinner for my daughter and I. We both came back home from work and feeling so hungry for not having lunch today at work. But so happy for the weekend. The reason why I decided to cook what we have in the refrigerator. Found these; broccoli and okra so with a pack of beef meat.

Sauteed Broccoli and Okra with beef meat, ginger, onion and seasoned with beef broth cube and a little bit of salt. Maybe for you it doesn’t look so tempting or appetizing but I tell you it taste so good and for a change it is not that bad. Vegetables are a healthy part of the diet of people who have type 2 diabetes. If you have this condition, you are encouraged to eat okra and broccoli. I often mentioned here about health benefits of okra for Diabetes now Broccoli as well is good for diabetes treatment and control, because of its excellent nutritional qualities. To understand how it benefits diabetics’ health, one must know a bit about diabetes. Diabetes is a disease where the body cannot absorb glucose from the food it digests.

YOU NEED…….

* 1 head of Broccoli
* about 250g Okra
* 250g Beef meat, sliced thinly
* 1 pc. Onion
* a thumbe-sized Ginger, peeled and sliced
* some Canola Oil for Sautying
* 1 pc. beef broth cube
* some salt
* 1/4 cup of water

HOW TO…….

** heat a pan or skewers, add canola oil just enough for sautying meat, onion, ginger, broccoli and okra. Add some water cover and let it cook until meat and veggies done. Seasoned with beef broth cube and to adjust seasoning I use salt. Thats it. Happy cooking and guten appetit!

NOCHE BUENA 2014

In the morning hubby, our daughter and I we made some shopping for our noche buena and pick up our traditional  fresh christmas tree infront of the church where the kiddos graduated from elementary before,  where they sell this trees.  The custom of the Christmas tree developed in early modern Germany.

Hubby did his yearly job of decorating it and every year is different. So this is our christmas tree for this year 2014!   He decided to have a small christmas tree this year. CHRISTMAS is an unique time or year. Christmas tree is a prime part of christmas season. One of the more enjoyable parts of Christmas other than opening gifts of course is going out to find the perfect tree and decorating it.

RACLETTE- a spcial treat not only during festivals or holidays.  We had the Raclette on Christmas Eve. All raclette ingredients can be prepared easily and when the time comes, you can sit comfortably together and spend the whole evening with food. Anyone can fill his raclette dishes according to their taste. We had this raclette grill in the center, as seen in the photo above to it’s frame a heating coil is mounted. Under this spirals space for small pans in which the raclette cheese is melted. We had chicken fillet, beef meat and pork meat. Also different kinds of cheese, button mushrooms or champignon, spring onions. apples, cherry tomatoes, cold cuts and small red radish.  For sauces we got two different sauces with barbecue and garlic sauce. Hubby had it with his steamed rice while kiddos and I with sliced brown bread.  It was fun doing this the whole night long while watching tv 🙂

BEEF MEAT

My “PINAPAITAN”

Today is a public holiday in Vienna, a Christian feast day, (Corpus Christi) or solemnity which honors the Body (corpus) of Christ (Christi).
It so happened both of us at are home (Hubby and I). I thought the company where he work would not allow him to have his day off today because of vaction time for the whole staff. Now it starts the rotation of summer vacation of all staff in his work. But anyway, we enjoyed the day today even only at home. Tomorrow he will be on duty again.

My PINAPAITAN

I cooked our lunch today, one among of his favorit the so called “PINAPAITAN”!
It is all innards from beef which I bought the last time we went to Matha Store, an India Shop.
Here I got this froozen “BILE” which is also from beef. Bile is the liquid from gall bladder which gives this bitter taste of “PINAPAITAN”.

PINAPAITAN-BEEF

Consist of 80% BEEF TRIPE, 10% of BEEF LIVER and 10% of BEEF HEART plus BEEF BILE!

YOU NEED…….

* A piece of Beef Heart
* A piece of Beef Liver
* 250g Beef tripe
* A thumb-sized Ginger, peeled and cut into sticks
* 1 Onion
* 6 Cloves Garlic or Garlic powder
* some Canola Oil
* Salt and Pepper
* some Lemon extract
* 1 Beef broth cube
* 1 Spoon of Beef Bile (Papait)

HOW TO…….

* Wash thouroughly and boil the meat until tender. Remove the broth and cut into thin sticks.
* Heat a caserole and add some canola oil then saute onion, ginger and garlic. Add the meat mix all together. Put some water or broth. I added some water for soup and not the broth wherein I cooked the meat until tender. Cover and let it boil again until done. Seasoned with salt and pepper, beef broth cube, bile and lemon extract. Served while hot with rice. Take it away from me Folks! 😉

MONDAY FOODSTUFF AT HOME

Stocks is not for everyone. Not all people having a stock of food stuff at home. If you’re hungry but no food at home, you still do not have to starve – not even on Sunday but today is Monda, tha start of the week. And for sure you have some food that you always love to have at home. So it is Monday and no plan at all to go out. What we have in refrigerator that will be cook for today. Let us start for todays breakfast 😀

CHICKEN HOT DOG

We still have this chicken hot dog which I bought for quite some time at new India shop near us. I bought it just for a try, for us it is something new.

Hubby’s version of chicken hotdog for breakfast. It is with beaten egg and
chopped chive seasoned with salt and pepper. 🙂

And this is my version also with beaten egg but I added also tomatoes, onion, and red bell pepper. Our two kids ate both version with buns.

AMPALYA WITH EGG and TOMATOES

Now we don’nt have lunch at home. At work we have this employees Canteen. Coming back home in the afternoon we both; hubby and I prepared this meal.
Just because your fridge is empty, it does not automatically mean that you have nothing to eat at home really. With a little imagination and skill, you can whip up a tasty meal also alleged residues. For me enough with stir-fry bitter gourd (melon/ ampalaya) with tomatoe, onion and beaten egg. Now for sure you will ask me why again with eggs! 😛
Eggs in the morning for breakfast then again eggs for dinner! Yes you read it right! That’s what we have in refrigerator today and two pieces of “Ampalaya” (bitter gour/melon). However, of course…the more ingredients are available, the more refined your cooking can be.

BEEF MEAT WITH MAIS AND PECHAY

Fortunately hubby found a pack of beef meat with a litte bit bone in ‘chill pack’. In his mind to have a soup “Nilaga” (boiled beef) woud be good. weather outside, it’s rainng…perfect isn’t it! 😉
It goes with a bunch of Pechay too left over from my “Tilapia Guinataan with Pechay the other day. Seasoned with “Patis” (fish sauce) and pepper corn.

We don’t have any fear of having dry food, I mmean without any sauce or just fried and sauteed. But if you have a chance and the ingredients at home have some soup this make you feel satiable. Because even a tasty roux can be prepared without much effort and especially without a lot of ingredients. very general rule is that you should do a little experiment with the simple, what you see on your shelves of food. With a little creativity can also be made ​​of dry ingredients conjure up a delicious meal. Well, on Wenesday or Friday time to do some shopping for stocks and maybe on Satuday hubby should get some meat and fish too. 😉
This is our Monday Food Stuff at home don’t ask me about dessert or “Panghimagas” because the answer is nothing!

SIOMAI (My Version)

Siomai is the popular and generic name that Filipinos call steamed dumplings. The most popular filling is pork but beef siomai is not too uncommon.

YOU NEED…….

* 750 g ground pork or beef
* 1/2 cup of shrimps minced
* 2 onions finely chopped
* 1 medium carrot grated
* 1 head garlic peeled finely minced
* 2 thumb-sized of ginger peeled grated
* 3 tbsps. soy sauce
* 4 tbsps. oyster sauce
* 1 tbsp. sesame seed oil
* 1/2 tsp. oregano
* 1/2 cilantro (koriander) powder
* 1 tsp. mustard
* 1 egg beaten
* salt and pepper
* Wanton wrapper

FOR DUNKING SAUCE:
* Soy sauce with Lemon or Soy sauce with “Kalamansi”

HOW TO…….

1.) It is traditional to add half a cup or so of uncooked minced shrimp to the filling. Just like what I did.
Nothing mysterious about making the filling — just mix everything together.

2.) To make the siomai, place a teaspoonful of the filling at the center of a wrapper and gather the edges together. Repeat until you have the desired number of siomai. And steam for 40 minutes. Serve with dunking sauce soy sauce with lemon or kalamansi. Enjoy!
