GINATANG TALONG AT PUSIT – EGGPLANT IN COCONUT MILK WITH SQUID 👩🏼‍🍳iCook

👩‍🍳Eggplant has many health benefits to offer. Good for diabetics may help cells do a better job of processing sugar just like me. And best of all low in calories and sodium and is a great source of dietary fiber. I often eat eggplant. Today I cooked it with squid and a bit spicy. About 6 pieces of Squid, cleaned

400ml Coconut Milk

4 pieces of Eggplant

some Olive Oil

3 pieces of Green Chillis, spicy or not spicy according to your preferences.

1 Onion, I used Red Onion

Ginger

4 cloves Garlic

some Salt

Fish Sauce or Patis

Chilli Flakes, optional

👩‍🍳With the fried rice with vegetables, only good things end up on the plate. Broccoli packs plenty of health benefits. while chicken thighs provide plenty of protein power. And thanks to provitamin A, carrots are good for our skin. It’s one meal you can’t ask for more.

Sardines fillet is breaded with Tempura and served with homemade Achara from my niece. Of course with rice, because we are Filipino. Achara is made from grated unripe Papaya originating from my country- the Philippines. This dish is often served as an accompaniment to fried or grilled foods, such as roast pork also to fish.

👩‍🍳The yellowish rice of Iloilo because of turmeric powder has to reach Vienna today. Remember my late mother who is fun of cooking this dish during all saints day or in Tagalog But my version is totally different from “Pista ng Minatay”. But my version is totally different from her. I don’t add meat like a chicken. I love this just purely kind seafood added. The Ilonggo’s undying love for their famous glutinous rice dish is a complete meal actually. NOTE: Recipe Yields 2 to 3 Persons

4 to 5 Boiled Eggs

250g Rice

1/2tbsp. Turmeric Powder

200g Shrimps

half a kilo Squid, a small one

300g Mussels

80g Raisins, dried

3pieces Frankfurter Sausage

some Scallions

half Yellow Bell Pepper

half Green Bell pepper

5 cloves Garlic

1 White Onion

a handful of Green Peas

some Olive Oil

FOR SHRIMP-TOFU SOUP:

👩‍🍳This time we visited Navigli Canal, which is fast becoming one of Milan’s most popular neighbourhoods, but there’s more to do here than see the canals from which the area takes its name. Also, we went to the Arch of peace which the Italians call “Arco Della Pace”, also we visited the “Santa Maria Delle Grazie” where you can find Leonardo Da Vinci’s Last Supper (Church of Holy Mary of Grace Chiesa di Santa Maria Delle Grazie) and meet up with my fellow Youtuber @johncel Vlog sa italya. Then we went to Chocolate Shop near Doumo. It was full of fun even though only for a short period of time. Nice meeting you Maricel. See you soon again.

🇵🇭DAING NA BANGUS (Milk Fish)- LUGAW (RicePorridge) WITH PORK LOIN IN UMAMI SAUCE & TOFU – SAUTEED CHAYOTE👩🏻‍🍳iCook

👩‍🍳”Kamayan na”, eating by hands no fork and spoon. Fried daing na Bangus, boiled okra and eggplant, spring onion and tomato, bagoong with chilli, and basmati rice. For breakfast, rice porridge (lugaw) topped with tofu and pork loin in umami sauce. Then my sauteed chayote with broccoli, carrot and ground meat, seasoned with mushroom sauce for lunch and dinner too. I love it, very Filipino. That’s all for today’s meal prepping at home.

TAGALOG: 👩‍🍳Pagkaing kinalakihan kung saan naging tao. Masarap at masustansiya rin na nakakapagbigay tulong sa ating kalusugan. Huwag lamang sobrahan gaya ng bagoong. Maalat na hindi maganda kung masobrahan nang kain. Dahil sa alta presyon o mataas na blood pressure ganon din sa puso. Bawat bagay na sobra ay hindi maganda sa kalusugan. Ah! basta masarap lahat ito. Nakaka miss kumain nang ganito lalo na kapag sa ibayong dagat ka naninirahan tulad ko. 🌏MALUNGGAY NOODLE SOUP AT HAM -MORINGA NOODLE SOUP WITH HAM 👩🏻‍🍳iCook

👩‍🍳Because of curiosity, my first time to try this moringa noodle which I got from Himalayan Shop. Cooked in a soup and topped with sliced ham which I boiled in Orange juice from a Tetra pack. Served with half boiled egg and with vegetables too. Never stop me to experiment with different food fusions. Discovering a lot of new ingredients (for me) from the market, but prepared using flavours inherent to another culture is the considered form of fusion cuisine just like this. 🌍🌏REPOLYONG MATULIS (POINTED CABBAGE) SPITZKRAUT IN GERMAN

👩‍🍳How healthy is pointed cabbage? In german “Spitzkraut” or in Tagalog “matulis na repolyo”. Healthy and low in calories. Since it contains a lot of fibre, it stimulates digestion. In addition, pointed cabbage contains a lot of so-called ascorbigen, which is converted into vitamin C during cooking. With only 20 kilocalories per 100 grams, it is also – like all types of cabbage – very low in calories. The reason why we love this type of cabbage here. Especially, my hubby, use add it in “Bulalo”, “Nilagang Karne” (Boiled Meat) or even in “sinigang na buto-buto” (Bones in sour soup). Me I love to make a salad out of it during summertime. Pointed cabbage is related to white cabbage but tastes much better. It owes its name to its shape the pointed cabbage grows pointed at the top. Today I added to glass noodle or Sotanghon mix with Udon noodle Japanese style.

👩‍🍳They said that fried rice most likely originated in China as a method of using up leftover rice. It’s been a while since we had any style of fried rice. I am too excited. This was an experiment with a new recipe for fried rice. Added leftover spareribs, garlic and yellow bell pepper which I got from Hofer. I have a lot of different varieties of fried rice on my blog. Most are pure experiments, maybe you can check it out if you’re looking for a recipe.

KINAMATISANG ISDA-FRESH FISH WITH TOMATOES & BABY SPINACH👩🏻‍🍳iCook

👩‍🍳Sariwang isda na aking nabili sa Turkey Shop. Hindi gaanong kaliitan pero malasa na nilaokan ng Baby spinach at Scallions. I have been cooking Kinamatisang isda for many of our meals and I can’t get enough of it. The soup base is yummy and has the right taste of tomato 🍅 in it for a bit of sour flavour, coupled with a mild bite. Then I added baby spinach you just need to watch out for the fishbones because it is a bit smaller fish. Happy prepping & Guten Appetit.😋

🇵🇭 EGGPLANT-TOMATO OMELETTE FOR BRUNCH 👩🏻‍🍳iCook 

👩‍🍳This was my Saturday brunch at home alone. Just what is on hand, eggplant, scallions and tomatoes. I call it omelette. I cooked it quickly over higher heat from the stove and did not fold it. I ate it with dark toast bread which is soft. They said another term for an omelette is a crustless quiche. This omelette is finer, of course, suited to a quick breakfast or brunch. So take it away from my kitchen folks. It is easy, quick and yummy.
