🇪🇺CHICKEN THIGHS WITH KEBAB SPICES, FENNEL, MUSHROOMS & TOMATO 👩🏼‍🍳iCook

👩‍🍳Today I made it different by adding fennel, tomato, potatoes, and mushrooms to whole chicken thighs not boneless seasoned with kebab spices. Usually, what I know is Chicken cut boneless, skinless chicken breast halves into 1-inch cubes. Onion. You can use any onion variety you want, red, white, or sweet depending on your flavor preferences. Bell Peppers. This chicken kebab recipe calls for two red bell peppers cut into a 2-inch piece.

YOU NEED…….

3 pieces Chicken Thighs with skin

4tbsp. Kebab Spices or more if you need

3 pieces of Mushrooms of your choice

2 pieces Fennel small ones

1 piece Tomato

6 pieces of Potatoes, small ones

Some Salt

some Olive Oil

some Water

👩‍🍳Curry is a mixture of up to 30 individual spices, no wonder that almost every curry spice tastes different. In India, curry is considered a traditional stew made from meat, fish, vegetables, and a wide variety of spices here, curry is usually understood to mean the well-known curry powder used to flavor dishes. Today I used this yellow Thai curry from glass which I got from a Chinese shop near us. And I also made Cassava “Inkiwar” an Ilocano taste for our afternoon merienda or snack with coffee and for my tea.

YOU NEED…….

RECIPE YIELDS FOR FOUR PERSONS:

700g Chicken, a mixture of thighs and wings marinated with paprika powder and Salt

3 Carrots

200g Champignon

1 Onion

some Scallions

a handful fresh Coriander

thumb-sized Turmeric

Bean Sprout, from Glas but you can use a fresh one too

2 tbsps.Yellow Thai Curry Paste from Glas

half a Liter of Coconut Milk

some Olive Oil

2tbsps. Fish Sauce or Patis

FOR CASSAVA:

400g grated Cassava

400ml Coconut Milk

Purple Yum Spread from Glas

125g Butter

👩‍🍳Chicken feet are eaten in many countries. My hubby‘s auntie usually cooks chicken feet in their soup with lots of vegetables. In the Philippines, Chicken can be eaten like liver, intestines, or goblet and feet. Some people may be considered the fear factor food chicken feet but not others just like us. Here in Europe, you could buy it almost everywhere. Fresh or frozen. But this one we got at Viktor Adler Market today. They said it is naturally rich in collagen, which is beneficial for looking youthful so I have to cook this regularly.🤪

YOU NEED…….

1kg Chicken Feet

3 pieces Carrots

1 Napa Cabbage, small

4 to 5 pieces of Jerusalem Artichoke

Ginger, a piece

4 cloves Garlic

1 Red Onion

Balsamic Chicken wings adobo with Pineapple

👩‍🍳This dark adobo version uses balsamic vinegar with pineapple seasoned with patis or fermented fish sauce is also tastes the same as the other dark adobo. Of course as usual with soy sauce although the varieties are endless. In the next few weeks, I’ll be showing you some other varieties of my adobo. The last one I shared with you is the pork belly version of this.

YOU NEED…….

500g Chicken Wings

5 cloves Garlic, pounded

5tbsps. Balsamic Vinegar

5tbsps. Soy Sauce

some Olive Oil

Fish Sauce, to adjust the taste

half a cup of Pineapple Chunks

🌏SIMPLE MEAL PREPPING – UDON – CHICKEN BREAST SOUP

👩‍🍳Of course, every correct menu also includes a soup. You are spoiled for choice when it comes to soup recipes – the selection is simply huge. And the best thing about it – many soup recipes are relatively easy to prepare with little effort. This is my version of udon chicken soup with broccoli, cauliflower and pechay. The most important thing in the preparation is the broth. Here I used Vegetable broth.

Udon-Chicken Soup

The rest were simple prepping my boiled banana in the rice cooker for snack or merienda. Hubby’s crispy knuckle of pork which he enjoyed eating with his own choice of dip namely; Toyomansi, (Soy sauce and Calamansi Juice) ginger and onion.

YOU NEED…….

250g Udon Noodles

some Olive Oil

5 cloves Garlic

Thumb-sized Ginger

1/4 head Cauliflower

1/4 head Broccoli

Pechay

1 Liter Vegetable Broth or more if you need

🌏My CHICKEN BREAST CURRY WITH SPINACH IN COCONUT🥥MILK

👩‍🍳Today I tried to cook chicken breast curry with spinach in coconut milk. I also added red bell pepper served with red basmati rice. Also, fish chips art of cooking with small mussels, squid and shrimps. Breaded a bit with almond flour then fried. Curry is the name for dishes from South Asian, Southeast Asian and Japanese cuisine based on a creamy sauce with various spices and additions of meat, fish or vegetables. Dinner for two again.

👩‍🍳Another simple recipe from my collection of stir-fry sauce. Spicy garlic sauce added to chicken breast, eggplant, zucchini and scallions served with basmati rice. 🇯🇵🇦🇮UDON NOODLE AND CHICKEN BREAST WITH CARIBBEAN SAUCE/ My RECIPE CREATION

👩‍🍳Another creation of mine using Caribbean Sauce which I bought from Teka Maxx. By chance, I discovered this seasoning or sauce which is good for cooking protein, vegetables and grains as an all-purpose seasoning instead of salty dried spice blends. You can use the whole jar as a recipe starter for 4 to 8 servings. I love trying lots of things from the market. Then create a recipe out of it just like today. A fusion of Japanese and Caribbean taste. Happy Prepping Guys!

👩‍🍳 Today’s cooking all about stir-fry chicken breast with Black bean sauce. Served with Basmati rice. 🇪🇺TURKEY SKEWERS & GARLAND CHRYSANTHENIUM COOKED in SALADMASTER SKILLET

👩‍🍳Garland Chrysanthenium leaves is my new fave green leafy vegetables. You can add it to the soup or just saute it. Just like here, I added sauteed green beans with minced pork, garlic and red onion. Turkey skewers were seasoned with paprika powder, salt and pepper. Chrysanthemum has been used for hundreds of years in Chinese medicine. People use it to treat respiratory problems and high blood pressure. Fans of the flower also say it can reduce inflammation and calm your nerves. So why not include it in my daily meal prepping.
