🇦🇹BALSAMIC PORK BELLY ADOBO WITH PINEAPPLE 🍍 AND CHICKEN MACARONI SALAD/ PUTO BUNGBONG-NILUPAK WITH CHEESE

👩‍🍳 This recipe of Adobo is a fantastic addition to our holiday meal. On December 24, we had lunch at our daughter’s flat and I brought this Balsamic Pork Belly Adobo with Pineapple and my version of Chicken Macaroni Salad. Since I have to work at night we decided to have lunch at her place and at the same time we got our traditional exchange gift so with our dogs. Beforehand hubby and I had our breakfast at home with Puto Bungbong not cooked in Bungbong and also Nilupak with cheese on top. Feeling like at home in the Philippines.

YOU NEED…….

For 1000 grams Pork Belly

3tbsps. Olive Oil

half a head Garlic

1 Onion or Shallots

half a tsp. Colored Peppercorns

3 pieces Bay Leaves

1/4 cup Balsamic Vinegar or more according to your preference, I love it a bit sour

3tbsps. Patis or Fish Sauce, fermented

1/2 cup of Pineapple chunks or tidbits

Scallions for garnishing

FOR CHICKEN-MACARONI SALAD Using 1kilo PASTA:

1000 grams Pasta

2500ml Mayonnaise

2 whole Chicken Breast

5 pieces Red Chili Peppers

200 grams Cheddar Cheese, grated

1000 grams Pineapple

250 grams Carrot

1 piece Green Bell Pepper

670 grams Pickled Cucumber

125 grams Raisins

👩‍🍳We visited the museum located in the former forester’s lodge of the Herbestein dynasty. The Arnold Schwarzenegger birthplace in Thal Graz is not only the official but furthermore the only museum worldwide that is bearing his name and is supported by the man himself. Ride the slide, a new attraction in the historic centre of Graz, in Schlossberg hill. The largest underground slide in the world. With 170 metres of track steep enough to take you up to a thrilling 25 km/h – down from Schlossberg hill to the Schlossbergstollen caves within.

👩‍🍳Today the Asian cuisine inspires me again and again. The great composition of different flavours and the fresh lightness of this dish will make you a fan in no time at all. Noodle a la Yakisomen with Portobello seasoned with Worcestershire and Soy sauce. And Turkey Sausages with eggs for today’s brunch before going to work For dinner after work I got fried Sprat or Sprotten in german, vegetables and juices.

YOU NEED…….

RECIPE YIELDS FOR TWO PERSONS

200g Noodles

34ml Ketchup

8ml Worcester Sauce

50ml Soy Sauce

1 small Bunch Pechay or Pak Choi even Bok Choi is ok

5 pieces Portobello-Mushroom, Small

1/2 Red Bell Pepper

🇪🇺LENTILS AND CHICKEN BREAST / SAUTEED PECHAY IN TOMATO PASTE AND SAUCE

Lentils are a typical ingredient for winter dishes such as hot stews and hearty soups. They fill you up, have a lot of fibre and are ideal for storage. This means that they can be used for delicious dishes all year round. In addition for today’s cooking video my sauteed pechay in tomato paste and sauce. No meat added.

YOU NEED…….

Half Chicken Breast

Chili Flakes

4 cloves Garlic

1 bunch Pechay

400g Lentils, boiled

1tbsp. Tomato Paste

1Liter Vegetable Broth

🌏SIMPLE MEAL PREPPING – UDON – CHICKEN BREAST SOUP

👩‍🍳Of course, every correct menu also includes a soup. You are spoiled for choice when it comes to soup recipes – the selection is simply huge. And the best thing about it – many soup recipes are relatively easy to prepare with little effort. This is my version of udon chicken soup with broccoli, cauliflower and pechay. The most important thing in the preparation is the broth. Here I used Vegetable broth.

Udon-Chicken Soup

The rest were simple prepping my boiled banana in the rice cooker for snack or merienda. Hubby’s crispy knuckle of pork which he enjoyed eating with his own choice of dip namely; Toyomansi, (Soy sauce and Calamansi Juice) ginger and onion.

YOU NEED…….

250g Udon Noodles

some Olive Oil

5 cloves Garlic

Thumb-sized Ginger

1/4 head Cauliflower

1/4 head Broccoli

Pechay

1 Liter Vegetable Broth or more if you need

👩‍🍳More than 30 years of married life with all ups and downs we are getting stronger than ever from day to day of our life.

👩🏻‍🍳Ilocos food is surprising, delicious and exotic all at the same time. Bagoong- Salty fermented anchovy is life for us Ilocanos. While the list of Ilocano regional specialities is extensive, dinengdeng, inabraw and soupy vegetables with a bagoong base are among of regional specialities. I love the choices of vegetables that are usually added to this dish.

As we go on this journey, thinking 🤔way back before our two kids came into our lives and now for me it is a huge change.

👩‍🍳Mga naaning gulay sa aming terase na puro dahon, talbos ng kalabasa, talbos ng kamote at kangkong na sinahugan ng inihaw na manok pero yong pakpak lang at kaunting laman dahil ayaw ko nang maraming karne natimplahan ng bagoong. Siyang tanghalian naming mag asawa ngayon. Simpleng lutong bahay at mga gulay na hindi binili lahat ay nagmula sa sariling tanim sa ika anim na palapag ng gusali na aming tinitirahan dito sa Vienna. Masustansiya at walang halong kemikal. Niluto ng aking asawa. Pagkaing bilang gamot sa mga may dayabetes.

👩‍🍳This is our lunch today. Jen’s (niece) last harvest of squash from our terrace urban gardening. Hubby cooked it with a piece of fried Dorado and spleen amaranth/ Kalunay or kulitis seasoned with anchovy sauce/ Bagoong balayan. A very simple way of cooking vegetables the way I like them. And because we are Filipino we ate with rice. But I enjoyed it without rice just vegetables and fish. Thanks for visiting, reading and watching.

👩‍🍳Jute leaves-Saluyot and Spleen Amaranth or Kalunay-Kulitis are both green leafy vegetables as you may know which I always have twice a week. During springtime until the end of summer. Why? Because you could only get fresh during this time from shop and spleen amaranth is for free from fields for picking. Austrian don’t know how to eat it. Hubby’s simple cooking today. Cooked in anchovy sauce with vinegar, garlic and onion. In “Tagalog” we call it “Pinaksiw na Saluyot”. Ate with my brown rice. Good for a diabetic like me.

Our two kids, living their own way of life, hubby and I just like before just the two of us with my two doggies. 🐶

👨‍🍳The difference between frankfurters and Vienna sausage is not Frankfurt. These are two different types of sausages. Worlds of food explain what the Frankfurter and Vienna sausages are all about and which came first. A frankfurter is a thin boiled sausage made from pure pork. But the Muslims made frankfurter out of beef meat. And this usually we can get from Turkey shop also the flatbread. In contrast to the Frankfurter sausages, Vienna sausage consists of pork and beef. That’s what we had for brekky today.

👩‍🍳Ilocos, located at the northern tip of the Philippines is bordered by the China Sea. That’s the place where my late father and hubby came from. Both are from Ilocos Sur. The reason why I love this dish so much especially the choices of vegetables that are usually added to this dish. If you see me cooking lots of meat, that’s for family. I prefer eating more vegetables than meat especially the green leafy ones. here is today’s lunch cooked by my hubby. He added the leftover grilled sea bream from yesterday. Looking for an easy soup? Take it away from my hubby‘s idea without having to buy a bunch of ingredients you rarely use for everyday cooking. These vegetables I always have in our refrigerator freshly bought from Supermarket. As you all know Sunday is soup day for us. Today vegetables with shrimp seasoned with just salt landed on the table.

Cooking for two not for four anymore, missing something, letting go of your adult children is the hardest part.

Pickled cabbage or Sauerkraut is a part of hearty sausages and salty smoked pork on cold days like now. But this time hubby cooked pan-fried pork belly with it. The pickled white cabbage not only tastes good but is also very healthy. It contains vitamin C. Pickled cabbage or Sauerkraut has a high lactic acid content and lots of fibre.

My Kitchen is something that always makes me smile 😃 and is the happiest place for me. Where hubby and I bond most of the time when we’re at home.🏡

🌏My CHICKEN BREAST CURRY WITH SPINACH IN COCONUT🥥MILK

👩‍🍳Today I tried to cook chicken breast curry with spinach in coconut milk. I also added red bell pepper served with red basmati rice. Also, fish chips art of cooking with small mussels, squid and shrimps. Breaded a bit with almond flour then fried. Curry is the name for dishes from South Asian, Southeast Asian and Japanese cuisine based on a creamy sauce with various spices and additions of meat, fish or vegetables. Dinner for two again.

Chicken Breast Curry with Spinach in Coconut Milk

YOU NEED…….

2tbsps. Olive Oil

1 whole Chicken Breast

400g Coconut Milk from can

a piece of Ginger

6 cloves Garlic

1 Red Onion, small

1 Red Bell Pepper

1tsp Curry Powder

1tsp Coriander Powder

My Chili Con carne with Pita Bead, Detox-Clean Juice

👩‍🍳The popular Mexican chili con carne can be enjoyed mild or hot. This version of mine is spicy I added chili flakes and a little bit of powdered chilis. The only common ingredients in all chili are meat usually ground meat pork or beef what ever your preferences is and chili but of course, there are also some vegetarian variations. Discussions about the original origin, the right ingredients and even the spelling keep stirring the hearts of chili fans. For this reason, there are countless variations and modifications of chili con carne recipes and mine is one of those.

Fig fruit or in German Feigen

Fig or Feigen is a fruit. Fresh Figs are in season from late summer to early autumn. So right now is the time or season for this fruit. With negligible protein, fat and micronutrient content. These are moderate source of dietary fiber. Red outside Brown inside can be eaten fresh or dried or processed into jam, rolls, biscuits and other types of desserts. Picture above is another variety the so called Cactus Fig or Cactus Feigen. When ripe the color turns into purple or brown.

500g Minced Pork Meat

2 cans of Red Kidney Beans

1 small can of Corn Kernels

1 Pouch of Maggi Chili Con Carne mix or Base

1tbsp. Tomato Paste

🇪🇺My TUNA OMELETTE SERVED WITH PITA BREAD & ANTIOXIDANT SMOOTHIE FOR BREAKFAST

👩‍🍳TUNA almost everyone knows canned tuna. The fish also knows how to convince fresh. There are numerous species of tuna that can be used as food fish. In Austria, the great tuna is primarily used to produce delicious dishes. The outstanding taste of the tuna, which is a little reminiscent of veal, is remarkable. Freshly roasted tuna, which is still pink on the inside, is a real culinary delight. Omelette recipes are especially popular in the morning. The omelette comes from the French, the eggs are whisked, seasoned and cooked in a hot, greased pan. In contrast to the egg dish, where the cracked eggs are torn, the omelette is cooked and served as a whole piece. Omelette recipes can be made with different ingredients like bell pepper, red onion, garlic and tomato. Not to forget my antioxidant smoothie with spinach, banana, strawberry, kiwi and mango makes our breakfast perfect today.
