🇮🇳FENUGREEK LEAVES COOKED IN MONGO(MUNG BEAN) | KASURI METHI OF INDIA

👩‍🍳Cooking Fenugreek leaves which I added to mung bean or mongo. But there is some side effect of fenugreek leaves but also good for health. It has been said that large doses may cause a harmful drop in blood sugar. Fenugreek can cause allergic reactions in some people. Which I found good for diabetics like me. Because one cup of methi leaves gives only 13 calories making it a good choice for those controlling their calorie intake. Rich in Vitamin K which is good for bone metabolism. Dried fenugreek leaves are known as Kasuri methi in India. It is also rich in dietary fiber. Today I cook mung bean with this and with smoked mackerel. For a change add the usual leafy green vegetable that we Filipinos know. Like Alugbati (vine spinach), ampalaya (Bitter melon leaves), even Camote Tops (talbos ng kamote), and spinach.

It is made from soy milk and has long been considered sacred and a staple food in Asia. My favorite tofu is the extra firm one because it’s the easiest to store and use. It is also the meatiest in terms of texture and more compact than the others. For more INFO please visit my blog and check out the link below.

🌏SQUID IN OYSTER SAUCE WITH PEARL ONION AND YOUNG CORN 👩🏼‍🍳iCook

👩‍🍳Inspired by my daughter. She remembered the one I cooked in 2012 with pork belly. But I don’t have pork belly at home so I cooked it with young corn, pearl onion, and green chilies seasoned with oyster sauce. But if my son is at home I don’t add oyster sauce because he’s allergic to it. It turned out good the fusion of sweet pearl onion and young corn is so good with the squid. It’s a bit spicy as per request by my daughter. She loves it spicy. Maybe you can try and tell me your thoughts about this. Another recipe creation directly from my humble kitchen.

300g Squid, cleaned

some Olive Oil, or any Vegetable Oil

5 pieces of Chilis not spicy

a handful of Pearl Onion

8 pieces of Young Corn, from Glass

2tbsps. Tomato Paste, alternative fresh tomato

🌏CHRYSANTHEMUM GREENS-TONG HO SOUP OF THE DAY👩🏼‍🍳iCook

👩‍🍳Unlike many other leafy greens, garland chrysanthemum hasn’t received much research attention. It seems to be a relatively unremarkable, albeit healthy food. Low in calories, relatively high in protein, and fairly nutrient-dense, this is a flavourful and very healthy side dish. I love it just to add to my broth, here just added to pork bones broth and I made tomato for dipping or add it in the soup. I ate it with my cauliflower rice which is good for diabetics. Next time I would love to try it just like a salad with sesame miso dressing. I’ll share to you the recipe. Great way to use the chrysanthemum greens!

YOU NEED…….

a bunch of garland chrysanthemum

🌏🌍VEGAN SAUSAGE IN SOTANGHON (GLASS NOODLE) & JUICING 👩🏼‍🍳iCook

👩‍🍳Amazingly delicious! In fact, I haven’t found any really good sausage alternatives yet, these sausages are really tasty, don’t fall apart, and don’t stick. Made out of soy and wheat. I love glass noodles or sotanghon but I’m looking for alternative meat and I found this vegan assortment of sausage the last one I tried a while ago was the marinated which I added to my salad. First, it is really new to me the taste and the texture compared to meat like chicken and pork. But I want to switch to vegan for some reason like health issues, type 2 diabetes, hypertension, and heart enlargement. Trying to incorporate more vegetables and more sustainability, why? Because I believe the environment also benefits from the reduction in meat consumption since the production of vegetable protein is significantly more resource-efficient than the production of animal protein. As you may know, if you are a subscriber of this channel, I love to experiment, food lover, adventurous, and motivated.

YOU NEED…….

1 Zucchini

1 Carrot

1 Onion

125g Baby Spinach

250g Vegan Sausage

half a Liter of Vegetable Broth with Soy Sauce

some Olive Oil

250g Sotanghon (Glass Noodle)

FOR JUICING:

Celery

Carrot

Ginger
