🇵🇭CHILI PEPPERS-EGGPLANT-FRIED TOFU ADOBO WITH BOILED EGGS

👩‍🍳Another creation from my kitchen to get rid of leftovers from the refrigerator one eggplant, the rest of the chili peppers from hubby’s cooking the other day, and the four cake tofu left from cooking soup. Just added boiled eggs and seasoned with Toyomansi product from the Philippines a mixture of Soy sauce and calamansi juice bottled turned out good, of course, that’s our simple viand with basmati rice. Our last night dinner for two.

YOU NEED…….

A pack of Chili Peppers mixture of red and green

2 Small Eggplant

1 Stick Lemon grass or Tanglad in Tagalog

1 Whole head Garlic

4 Eggs, boiled

4 Cake of Tofu, fried

2tbsps Olive Oil

some Oil for frying Tofu

150ml Toymansi, product from the Philippines mixture of Soy sauce and calamansi juice

You can adjust the taste with salt and pepper
