LINGUINE in PALABOK SAUCE

Italian meets Filipino. Thatโ€™s the highlight of this recipe. I cooked linguine with palabok sauce for Jenโ€˜s (niece) birthday dinner instead of traditional Pancit or Sotanghon in the Philippines. For the toppings I had; small octopus, smoked mackerel flakes, mussels with scallions and crunchy fried onions. As a change from the well-known and popular spaghetti, many chefs regularly use the long, but not round, but flat linguine. These very narrow ribbon noodles are also sold under the name Trenette.

The origin of the pasta name Linguine is exciting. The word linguine is something like “little tongue” in Italian. The narrow ribbon noodles are not only sold under different names but can also if necessary be replaced by other narrow ribbon noodles such as the Bavette, for example. The linguine, which are also popularly referred to as linguini, originally come from the Campania region in Italy. Added with Filipino “Palabok” sauce the thick yellow-orange sauce.

500g Linguine

2 small Octopus๐Ÿ™, boiled

1 smoked Mackerel, flakes

some Fish Sauce or Patis

NO-BAKE CHEESECAKE with INCABERRIES TOPPING

You can also conjure up a super delicious cheesecake without an oven Iโ€˜ll show you how easy it is. Cake without baking, in my opinion, they are not so good for baking because they are very badly damaged in the oven due to high water content. Never mind what are the so-called โ€žno bakeโ€œ cakes for! No-bake cakes, as the English name suggests are not baked. They usually have a rather thin base and refreshing cream spread over it, which then sets by cooling it in refrigerator. Often, the no-bake cakes can be prepared really quickly and personally, I particularly like the fact that you save yourself baking and looking back in the oven. Today I conjured up a no-bake cheesecake with very fresh Incaberries topping. The biscuit base is wonderfully crispy, without sugar added in it.

My KIMCHI FRIED RICE

My Kimchi fried rice

Fried kimchi rice or Kimchi-Bokkeum-Bap, a very popular dish in South Korea. Kimchi fried rice is mostly made from kimchi and rice along with other available ingredients like diced vegetables or meat like Spam. My version is with Champignon and added more Chili ๐ŸŒถ Paste that gives the reddish color plus the sauce from my homemade kimchi. Hope you like this version.

YOU NEED…….

2 big spoon of Kimchi

2 cups of cold cooked rice, I used brown rice

3tbsps Chili ๐ŸŒถ Paste

5 cloves Garlic ๐Ÿง„

some Vegetable Oil

100g Champignons, sliced

Sauce from kimchi

2tbsps Soy sauce

My HOMEMADE KIMCHI

This week is all about โ€žKIMCHIโ€œ. My version is a mixture of Chinese cabbage, carrot, and scallions, with garlic, ginger, fish sauce, chili paste, chili powder and rice flour. The recipe Kimchi, fermented Chinese cabbage which comes from Korean cuisine. A healthy side dish recipe that tastes good . In Korean cuisine, kimchi is the name given to both the preparation of vegetables by lactic acid fermentation and the vegetables prepared in this way. Kimchi is traditionally canned like sauerkraut as a vitamin C store for winter.

YOU NEED…….

1kg Chinese Cabbage

125g Salt

1 whole head Garlic ๐Ÿง„

2tbsps finely grated Ginger

3tbsps Chili ๐ŸŒถ Pulver or more

1Big Carrot ๐Ÿฅ•

4 Scallions

5tbsps Chili ๐ŸŒถ Paste or more

2tbsps Fish Sauce

2tbsps Rice Flour

some Water for rice flour and for soaking the Chinese cabbage

NOTE: I used food processor to mix the chili Pulver, chili paste, ginger, garlic and fish sauce.

I cooked Rice porridge or congee with turmeric powder and chicken feet. Turmeric as the potential to prevent heart disease, Alzheimer, and cancer. Also help improves symptoms of depresion and athritis. So try to include or use turmeric in your daily home meal prepping.

TOFU and RED KIDNEY BEANS a la MEXICAN STYLE

๐Ÿ‘ฉโ€๐ŸณA light vegan stew that is bursting with flavor fruity tomato from our terrace urban garden from the very last harvest this year, slightly piquant chili spices next to peppers, red bell peppers and beans, coriander and lime to soothe. Plus it’s quick and low-carb friendly! Which you can serve for your family with bread or you can serve with rice too if you want. We are Austrian we ate it with spelt bread which is good for a diabetic. I added tofu instead of meat. I love it if it is a little bit soupy. Have a try with this recipe.

BURRATA CAPRESE

Burrata is an Italian cream cheese specialty and is similar to mozzarella. The shell of the burrata is even made from ordinary mozzarella. But its creamy secret is hidden inside. If you cut a burrata fresh, thick, cream and plucked mozzarella pours out from inside.

Burrata is made from cow milk cheese occasionally buffalo milk. Buffalo mozzarella from Italy is considered a delicacy and extremely healthy. Contains more iron, vitamins and calcium than mozzarella made from cow’s milk.

A real express recipe really tasty and good! Here delicate soba noodles meet spicy, tender beef that is refined with oyster and soy sauce. Add fresh tomatoes, arugula and red onions, now itโ€˜s time to get the forks or chopsticks ๐Ÿฅข as you like! Basically, it is a soba noodles salad topped with beef meat. Take it away from me folks.
