ESCABECHE-HORSE MACKEREL

👩‍🍳The dish appears as far as Asia in the Philippines with adjustments to local food staples. Here I have horse mackerel, bell peppers, carrot, ginger, onion, and lots of garlic. Being a big fan of garlic I added almost a whole head. Escabeche is a traditional dish of Iberian, South American and North African cuisine. Fish is turned in flour and fried in oil, marinated in a marinade of oil, vinegar, water, onion, garlic, bay leaf, carrots, paprika and spices and pickled for at least 24 hours.

My horse mackerel escabeche

YOU NEED…….

Recipe yields 4 Persons

5pieces Horse Mackerel

2pieces Bell Pepper

1 Carrot 🥕

1 Onion 🧅

Ginger

Garlic 🧄

1 Lemon 🍋

1tbsp Brown Sugar

1tbsp Cornstarch

2cups of Water

1tsp Salt

Chili 🌶 flakes
