“Beuschel” with bread dumpling – iCookiTravel

โ€žBeuschelโ€œ ragout made with heart and lungs with bread ๐Ÿฅ– dumpling. Innards can be found very often in the Viennese cuisine and are highly estimated amongst gourmets. The Beuschel (veal lungs) supposedly is a Jewish dish and is that prominent in the Viennese cuisine. Enjoy!๐Ÿ˜‹
YOU NEED……

* 500g Veal Lungs

* 1 pc. Veal Heart

* 1 pc. each Carrot, Celery and Yellow Turnip

* 1 pc. Bay leaf

*some Pepper Corns, Thyme and Onion

*some Caper

FOR THE SAUCE…….

*40g of Butter

*30g Flour

*1 tbsp. Capers

*1 Onion (small)

*1 anchovy Fillet (in Oil)

*1 clove Garlic, chopped

*1 Lemon, peeled and untreated

*1 tbsp. Parsley

*some Vinegar, Sugar

*Marjoram, ground

*2 tbsp. Mustard

*Sour Cream

*2 tbsp. Sewwt Cream

*Lemon juice

*Salt and  groundPepper4Tbsp. Goulash Sauce, optional

HOW TO…….

Wash and clean lungs and heart, cut into pieces. Then cook into 2 liters of water with salt, bay leaf, some pepper, thyme, peeled onion, and garlic. Then remove the meat and cool in cold water. Strain the soup, let it boil. Cut the meat into lenghtwise, just like fine noodles. Mix with salt, pepper, juice of a quarter lemon and set aside.

SAUCE:

The onion, capers, anchovy fillets, parsley, peel a quarter of lemon and some marjoram very finely chopped. Then add the finely chopped ingredients and briefly roast. Stir with vinegar, pour in the soup, stir thoroughly with the snowbuck, simmer gently for about 20 minutes. Add the cut meat, season with mustard, sugar, add rose peppers and marjoram to taste, add sour cream and let it rest for a quarter hour. Serve with hot goulash sauce on top and bread dumplings. Diabetic dinner, boiled broccoli and Nappa cabbage with red onion and turkey ๐Ÿฆƒ breast no fat at all. I got told that keeping your fat intake in check helps you stay healthy and the low fat approach has been strongly recommended for people with diabetes.

YOU NEED…….

* 1 head of Broccoli

* 1 red Onion

* a small Nappa cabbage

* about 200g turkey ๐Ÿฆƒ breast

* some water ๐Ÿ’ฆ or soup ๐Ÿฒ stock just enough to cook ๐Ÿ‘จโ€๐Ÿณ the vegetables

* salt & broth cube to taste

Pumpkin with ground meat – iCookiTravel

My Pumpkin bowl cooked with ground meat, oregano  and tomatoe paste seasoned with salt and pepper. I love pumpkin specially the Hokkaido Pumpkin, a quick and cheap meal from the pumpkin hokkaido.  For more recipes check it out here from time to time. Beans Sprout Bowl cooked by hubby, how I love the way he cooked this, veggies stays crunchy, not too salty and not too much meat just enough to taste quick and easy to prepare.  Aside from a non-starchy vegetable,  Scientific studies have shown that sprouts can have a positive effect on controlling diabetes.  Yummy-liscious Daddy! Homemade Chinese vegetable soup – iCookiTravel

Chinese vegetable soup bowl. Homemade chinese vegetable soup is low-fat and rich in nutritious high-fiber vegetables that make it hearty choice for my healthy meal. Such as zucchini, chicharo or green peas, bean sprout or togue, button mushroom, carrot, broccoli and a bit of nappa cabbage. So what you could ask more?

My noodle plate – iCookiTravel

Noodle plate that was Sunday brunch last week, at home with the kids. Just bought noodles from Turkey Shop near home, they are open on Sundays and Holidays which is unusuall in Vienna. Because on Sundays and holidays all shops and store’s are closed. Cooked with nappa cabbage (Chinakohl), carrots, an organic zucchini from a colleague from her garden and chicken breast sauteed with red onion and garlic seasoned with soy sauce, pepper and chicken broth cube. Served with sliced lemon and buttered toast.

Do you know that drinking beetroots regularly can help or improve diabetes and hypertension?!  I started making juice out of this and drinking every morning with empty stomach before breakfast, hoping that it will help me. Will keep you posted about the result!

Bastardmakrele in german – iCookiTravel

The so called “Bastardmakrele” in german, I don’t know in tagalog but I call it “Horsemackerel” with eggplant, chili, ginger, red onion cooked in vinegar seasoned with salt and pepper. Others says “Pinaksiw” or “Paksiw” and to others “Pinangat” or “Pangat”, what so ever… so freshly cooked from my kitchen bought from Turkey Shop for only 5.99 euro per kilo. That was lunch. Beef Liver with white onion rings – iCookiTravel

A pan fried beef liver with white onion rings seasoned with soy sauce and a little bit of balsamic vinegar just for hubby and me, because our two kids doesn’t eat innards. I ate it with smashed potatoes and cream spinach (not in picture). While hubby had it with rice, what else! Guten Appetit!

How the order you eat your food affects your health:  Studies says; starting our meal by eating vegetables and protein, keeps us fuller than if we ate first carbohydrates.

In this situation today, I got home went direct in my kitchen prepping my soup; boiled some water in a pot dropped some carrots, added beef broth cube, let the carrot half way done then I added napa cabbage and fine noodles before serving dropped two eggs. That was my first meal today after six hours of duty. So all-in-one carbohaydrates because of noodles, some veggies, and eggs for protein. I ate with some Rye wholecorn crispbread with butter. Eating the same food in the opposite order will not feel better after a meal specially for type 2 diabetes. In my today’s situation in which my meal is all-in-one, I don’t think it is the right way to control my blood sugar levels. Blood sugar normally rises after eating, but for people with diabetes it can spike dangerously.  People who spend longer preparing food are healthier, what I did today was a very quick cooking!  Just to have it fast in my stomach. Take it away from me Folks!

My eggplant ๐Ÿ† assortment from farmers market. Eggplant is low in calories & carbohydrates but high-fiber and non-starchy vegetables. As type 2 diabetes patient, management requires eating a healthy diet rich in non-starchy veggies. Studies have shown that a diet rich in potassium, can help to prevent stroke and high blood pressure. That is eggplant ๐Ÿ† a good ๐Ÿ˜Š source of potassium.

Pumpkin ๐ŸŽƒ or in german- “Kรผrbis” which is known to most people from Halloween rather than the local menu, is a vegetable that is available throughout the year at the supermarket. In winter, the so-called winter pumpkin, including the giant pumpkin, which is use on Halloween and carved into creepy grimaces. Pumpkin ๐ŸŽƒ contains quite large amount of water because of this, it has a low calorie content and is eaten with diets. An exception, however, is the Hokkaido pumpkin, which has nearly three times as many kilocalories as the yellow ones.

Hokkaido pumpkin ๐ŸŽƒ Eating Hokkaido pumpkin is also very suitable for diabetics, because of high contents of fibre and detoxifying. Also help younger looking skin, and most so all in scientific tests, pumpkin ๐ŸŽƒ has been shown to reduce blood glucose levels. So if you have diabetes, munching on pumpkin ๐ŸŽƒ certainly won’t hurt.๐Ÿ˜…See even my doggie ๐Ÿถso curious with it!๐Ÿ™ˆ
