DADA’s BIRTHDAY CAKE

My other half who’s celebrating his Natal Day today at home. Cake was also baked for today of course, but somehow not that much, since we ‘celebrate’ today with our two kids and some of his colleagues. Tomorrow is another day for him!!!

My Coffee Cake

YOU NEED…….

* 4 cups Rice flour
* 1/2 cup Sugar
* 2 tbsp. Coffee powder
* 1 tsp. Vanilla Flavour
* some salt
* 6 Eggs
* 2/3 cup Canola Oil
* 120ml Water
* 250g Mascarpone
* 1 pack of Chocolate custard

HOW TO…….

Pre-heat oven to 350°F or 180 °C.

Combine all ingredienst in a large bowl and blend on low speed 2 minutes. Increase to high speed for 8 minutes.

Coffee cake ready for baking

Pour in cake pan. Bake for 40 or 45 minutes or until tester inserted in centre of cake comes out clean. Removed from pan to cool.

Cut in the middle to insert mascarpone then put back the upper part.

Topped with grated Walnuts

Cover with chocolate custard and topped with grated walnuts!

WHOLE GRAIN BUTTER BISCUIT CAKE

This was only a try, cake without baking you just need your refrigerator 🙂
Something a little bit American or Yugoslavian way.
I never thought that I could make it, but here is a the CAKE-not quite classic, but certainly as delicious 🙂

Whole Grain Butter Biscuit Cake

YOU NEED…….

* 2 packs whole grain butter biscuit
* 300g Mix of Raspberries, blueberry or Curant/ fresh or frozen one
* 74g Custard powder or 2 packs
* 1 Liter Milk
* Saccarin or sugar for none diabetic

HOW TO…….

Cook the fruits add saccarin or sugar until thickened. For frozen one you don’nt need to add some water but if you are using fresh one you have to. Then mash with hand-held blender. Set aside to let it cool.

Mix custard powder with about 1 tablespoon of saccarin or 2 heaping tablespoon of sugar. With 6 tablespoons of the prepared milk or half a liter until smooth.

Boil rest of the milk, and stir in the powder for one minute and add the fruits mixing all together until it blend then set aside to let it cool.

Then alternately in a cake mould first layer biscuit, then custard-fruits mixture then biscuit and on top custard-fruits mixture.

It depends upon your prefernces how many layers you want. Here I did two layers only.

SOMETIMES…

Sometimes you just want to be alone. Sometimes you have to step back, to find yourself. When everything is messed up and it hurts. Then you don’t have any idea where the perfect place to run too.
Some steps need to be taken alone until you fight yourself to discover the real you, there is only one winner…

Sometimes I have to step back

Closing the door once in awhile is good. It helps to connect and reflect, need to understand the loving care with which God closes doors in your life. He is the one who opens and closes doors in our life. Maybe to change directions, incentive to pray more…or it’s a blessing… . People around me don’t understand… or maybe because they don’t know the real Me! But God knows me so well, and that counts a lot. Thank you so much Lord for all the trials that made my family more closer to you, increased our faith and understanding why you allowed some severe adversity to hit me in the first place. But made me more stronger than ever.
