🇦🇹MOTHER’s DAY HIKES WITH MY DOGS 👩🏻‍🍳iTravel

👩‍🍳Having our break from the city, my daughter and I we decided to celebrate Mother’s day by hiking outside Vienna with our dogs. At the nature park Purkersdorf – Sandsteinwienerwald is a part of the Vienna Woods and is located in the municipality of Purkersdorf in Lower Austria. The approximately 77-hectare nature park is freely accessible all year round. Mother’s Day hikes with our four dogs.Just hike and be happy.

My Mother’s Day weekend will be filled with dog family and my daughter with me. A healthy mama am I to my two kids. 😊 Hiking us a must for me at least three times a week or more. For about two hours or three or even more. Good for my age, aside for being a type 2 diabetic. Moms who are wild at heart or don’t want to skip their daily steps may like this gift. With your family think about a picnic along a scenic hiking trail a great way to spend outdoors time with Mom too on Mother’s day. A bit incomplete for me because hubby and my son has to work. But still there is some other time to do this it should not be on Mother’s day.

T-BONE-STEAK AND CAULIFLOWER RICE IN SPRINGTIME

👩‍🍳A steak is a short-fried or briefly grilled piece of beef fillet. Of course you can also prepare other types of meat such as pork, veal, turkey or deer as a steak – but then it must be clear from the recipe name – the original steak is always from beef. Here pan fried T-Bone-Steak with my cauliflower rice and for hubby white rice with cherry tomatoes-scallions as side dish. It’s springtime in Vienna.

T-Bone-Steak & Cauliflower Rice

YOU NEED…….

2 pieces T-Bone-Steak

1 whole Head Cauliflower

Olive Oil

Salt and Pepper to taste

Some Scallions

100g Cherry Tomatoes

1 Lemon for Lemon Juice

🇵🇭PINAKSIW NA BANAK I MULLET FISH COOK IN VINEGAR

Today I cooked Mullet or “Banak” in Tagalog in vinegar or the so-called “Pinaksiw” with chillis. Craving satisfaction for me. This is the first time I cooked “Pinaksiw na Banak” here in Vienna, for more than 3 decades of living here. I miss this from home. Happy Prepping everyone!

FARMERS MARKET-CHICKEN FEET(ADIDAS)-PAA NG MANOK-HUBBY’s COOKING

👩‍🍳Chicken feet are eaten in many countries. My hubby‘s auntie usually cooks chicken feet in their soup with lots of vegetables. In the Philippines, Chicken can be eaten like liver, intestines, or goblet and feet. Some people may be considered the fear factor food chicken feet but not others just like us. Here in Europe, you could buy it almost everywhere. Fresh or frozen. But this one we got at Viktor Adler Market today. They said it is naturally rich in collagen, which is beneficial for looking youthful so I have to cook this regularly.🤪

YOU NEED…….

1kg Chicken Feet

3 pieces Carrots

1 Napa Cabbage, small

4 to 5 pieces of Jerusalem Artichoke

Ginger, a piece

4 cloves Garlic

1 Red Onion

Fish sauce Salt to adjust the taste

🌏RIBS AND BEANS 👩🏻‍🍳iCook

👩‍🍳Spare ribs almost melt on the tongue, it is BBQ flavoured and the beans are from a can. I don’t have time to soak overnight and cook the reason why I opted to use from a can. Combining red kidney beans and white beans. We love it tastes like Cajanus peas or in Tagalog “Kardis”. So this was our dinner while watching an update about politics in the Philippines. Again coming back home after 10 hours of duty from work. Have to cook for dinner. Always fresh and warm meal for us.

YOU NEED…….

800g Spare Ribs, marinated in BBQ marinade I used Mama Sita’s

400g Red Kidney Beans, from can

400g White Beans, from can

A handful chopped Parsley

1 White Onion

2tbsps. Tomato Paste

1 piece Tomato, medium sized

Salt to adjust the taste

Some Olive Oil

Some Water, should be covered to cook

🇦🇹PORK BELLY-TOFU-MISO SOUP

👩‍🍳The warmth! A hot bowl of soup is sure to warm you right up, even when the thermometer has dipped into the negative numbers. Hot soup warms your body from within, giving you a core warmth that’s sure to spread to every part of your body. Here is my pork belly-tofu-miso soup to warm us. With miso powder, scallions, carrots, pak choi, and season with mushroom sauce and fish sauce to adjust the taste. We feel like satisfaction meets after eating. Outside is raining and the temperature is down but it is springtime.

YOU NEED…….

150g boiled Pork Belly or two sliced

100g Tofu is not too hard

2 pieces Bok Choi or Pak Choi the small one

2tbsps. Miso Powder

Scallions

1 Carrot

Inoki Mushrooms

2tbsps. Mushroom sauce

Fish Sauce, to adjust the taste

🌏LAMB FRIED RICE- SQUID ADOBO SA GATA- CELERY TURMERIC JUICE- DINNER FOR TWO 👩🏻‍🍳iCook 

👩‍🍳 I was inspired by Caribbean lamb fried rice which is so delicious tossed with cold cooked Turkey rice which has a resemblance with Japanese rice. Added carrot, scallions, green peas, garlic and red onion. I will try also the original recipe of the Caribbean one day. Match with my squid adobo sa gata for viand. Dinner for two tonight. Hopefully, you like tonight’s meal prepping simple as that direct from my humble kitchen here in Vienna. Hubby was so happy about this. The following morning we had it for brekky with salted eggs and Banat by Herbal coffee.

YOU NEED…….

FOR AQUID ADOBO SA GATA (SQUID ADOBO IN COCONUT MILK)

half a kilo Squid

250ml Coconut Milk

half head of Red Onion

4 cloves Garlic

a thumb-sized Ginger or more

a cup of String Beans

Chilli of your preference

2tbsps. Soy Sauce

2tbsps. Fish Sauce (Patis)

1tbsp. Vinegar

Salt to adjust the taste

FOR CELERY-TURMERIC JUICE:

3pieces Apples

4pieces Small Carrots

Juice from Half Lemon

Few Sticks Celery

Thumb-sized Ginger

80g Turmeric

FOR LAMB FRIED RICE:

5 cloves Garlic

Half head chopped Red Onion

Half cup small cubes Carrots

100g Thinly sliced Lamb meat

1/4 cup Green Peas

Handful chopped Chive

2 Eggs, beaten

Cold cooked rice

Salt to taste

🇵🇭SEA GRAPES/ LATO/ AR-AROSEP/ GREEN SEAWEED/ UMIBUDO ALGEN/ MEER TRAUBEN/ SEETANG

👩‍🍳Green Caviar, Lato, Green Seaweed, Sea Grapes, Ar-Arrosep, Umibudo Algen, Meer Trauben, or Seetang, Caulerpa lentillifera, whatever you want to call this. Served today with my fried pinaksiw Mackerel. Why Lato or Ar-arosep? Because they-we or I believe is good for persons who suffer from diabetes. Just like me with type 2 diabetes. Study shows that it is a potential anti-diabetic agent because it is able to enhance insulin secretion. According to slim, it is high in iodine, magnesium, and vitamin K. I bought this here in Vienna for 100 grams paid nine euros. Eating seaweed is a super-healthy and nutritious way to add extra vitamins and minerals to your diet. Eating it regularly may even boost your health and help protect you from certain diseases.

HOW TO…….

👩‍🍳Today is a fish day in my kitchen with seafood, horse mackerel and mackerel. Horse mackerel cooked in green tomatoes just like “pinaksiw” a few from mackerel I did fried and cooked with string beans and bitter melon the rest I frozen it for another dish. Fish recipes must be freshly prepared and should be on the menu at least once a week. They are rich in omega-3 fat

For frying seafood, I just seasoned it with salt and pepper, then coated it with almond flour and fry it a bit deep fried. Don’t let it too long otherwise the squid will turn just like rubber.

While the small horse mackerel I cooked with green tomatoes, ginger, garlic and vinegar just like “Pinaksiw”. The rest I just fried it and cooked with string beans and bitter melon served with red fried rice for our dinner for two.

Balsamic Chicken wings adobo with Pineapple

👩‍🍳This dark adobo version uses balsamic vinegar with pineapple seasoned with patis or fermented fish sauce is also tastes the same as the other dark adobo. Of course as usual with soy sauce although the varieties are endless. In the next few weeks, I’ll be showing you some other varieties of my adobo. The last one I shared with you is the pork belly version of this.

YOU NEED…….

500g Chicken Wings

5 cloves Garlic, pounded

5tbsps. Balsamic Vinegar
